Do you have Quintess's book? Her banana bread is AMAZING. It calls for 3 bananas, but I've made it with only 2 as long as they're not too small. Otherwise, I like to make banana muffins with chopped dates.

This isn't a baking idea, but as a last resort you could peel them and freeze them, and then make a smoothie or a shake later on. At least they won't go to waste if you can't use them today.

I already froze them (peels on) and let them thaw on the counter all day. I am ready to use them NOW
