Thanksgiving Casserole
What you need:
2 cups cooked brown rice (or substitute lentils)
1/2 cup cashews or walnuts, chopped
2 slices of whole wheat bread, chopped into small cubes
1 cup vegetable broth
1/2 cup soy milk
2 tablespoon nutritional yeast
1 rib celery, diced small
1 small onion, finely chopped
3 tablespoon olive oil
herbs to taste: sage, marjoram, thyme, rosemary, pepper (or poultry seasoning)
What you do:
Preheat oven to 350 degrees. Spray a 8- or 9-inch square casserole dish with cooking spray.
While rice is cooking, saute celery and onion in the olive oil. Mix well all ingredients in a large bowl. Spread into casserole dish, and bake for 45 minutes.
Tastes even better topped with vegan gravy!

This was good. I think next time I will add some mushrooms or something to make it more of a main dish, it is a great side though. It tastes a lot like stuffing
Excellent! I've made this twice, once with lentils and once with brown rice. I prefer it with rice though it is good either way. This will be a regular Thanksgiving staple at my house from now on.

i used a few different ingredients that i had instead of the ones stated to save money at the grocery.
i used wild rice, rye bread, and a little bit of gimme lean sausage.
soooooo yummy though, keep the good tastins coming!
