What are your favorite... recipes? (Updated 7/1)

Back again.  I changed the name of this topic that way its not a new whats your favorite everyweek.  For those who didn't look into the last post everyweek or so I'm going to put up a new ingredient or category of food for people to put down their favorite recipes for.  This should help people expand what there eating by seeing what others enjoy.

This weeks item is one of my favorite things to cook.... Lentils!!! ;D
My favorite recipes are

-Amazing and Versatile Rice and lentils http://vegweb.com/index.php?topic=4936.0this is my favorite recipe for lentils... but I don't use any oil instead I chop up a carrot and throw that in with the onion and for spices I use 1 tsp each of cummin, curry powder, cayenne, coriander and 1/2 a tsp of cinnamon and ginger

porridge! oatmeal made to a creamy, thinner consistency than thick, globby, chewy oatmeal. i use soymilk (or nut/rice milk) and water...sometimes i  like it decadent and 'dressed up' but not always... alsi i like to eat it cold sometimes too  :)>>> Yumbles!

And don't forget couscous! WW couscous topped with soy yogurt and chopped fresh fruit and maybe nuts, and some brown sugar. I did a recipe for it here, called "Couscous For Breakfast". I make it the night before and let it get cold first. But you could eat it hot, anyway.

Except I'm not supposed to eat wheat products anymore...

And don't forget couscous! WW couscous topped with soy yogurt and chopped fresh fruit and maybe nuts, and some brown sugar. I did a recipe for it here, called "Couscous For Breakfast". I make it the night before and let it get cold first. But you could eat it hot, anyway.

Yabbit, are you gluten-free now? Or avoiding wheat for celiac/thyroid reasons? I've heard that iodine is good for healthy thyroid function, on the more homeopathic/natural bent.

I have been on a major carrot kick for the last few weeks.  Nothing special just rinsing them and eating them.  So this week is what do you like to make with carrots?

This is one of the VW recipes that I make literally all the time. If you tweak the spices a bit it can sub for pumpkin pie filling, which since we can't get pumpkins here, is really good. I add ginger, clove and cinnamon.

If you look on the New Recipe Queue you will find a recipe that I submitted a good 6 mos ago for Pot-Roasted Veggies. I don't know why Y hasn't processed it since she has posted recipes that were submitted way after it. Sigh. Maybe she doesn't like carrots either.

I had a hard time learning to love cooked carrots, as for school lunches we got canned carrots (blergh) just heated up. Personally I'd rather swallow a live goldfish.

My favourite is cream of rice, but I can't get it here. Followed by cream of wheat, which I'm not allowed to eat anymore. Which leaves me with oatmeal. Which I do like. Make it with water, and season with salt and buttery spread, or with milk and add a spoonful of natural cocoa powder and sweetning. I don't like cold fruit in hot cereal.

Yabbit, I recently learned to make my own rice cereal by  taking brown rice (uncooked) and powdering it in a blender. boil 2 cups of water, add 2/3 cup of the powdered rice and simmer for 10 min. (stirring frequently) that may replace your cream of rice cereal! I make it for Lyle and add all kinds of healthy goodies and fruit to it.
Do you have a blender or food processor? I use the Vitamix but the book I got it from uses a regular blender-just for longer.

I've never cleaned my rice before cooking it, so no, I don't clean it. I just put it right in. Even the kind that takes 50 min to cook only takes 10  min.

awesome, thanks for the tip! i have the superbabyfood book too, but she doensn't address washing the rice/beans before grinding, and i wasn't sure if you're supposed to dry-rub them with a towel, etc...i guess washing isn't necessary...thanks again  :)

So I decided that this week I shall use potatos for the ingredient.  I am a simple man so the only way I use potatos is to bake them.  I just throw them in the toaster oven then an hour and a half later devour them.  So I need a recipe to make myself feel less lazy.

ac's outstanding cheezy potato bake thing is awesome - i havent made it yet, only eaten it when cakes! brought it to a potluck but it was definitely outstanding and looked pretty simple to make.

Yes! The cheezy potato bake! MAKE IT NOWWW! You don't really have to pour the sauce in between every layer, I just pour it over the top. Same with the margarine..I just put pieces over the top layer and pretend it is healthier that way.

Hm. Other than that and hashbrowns, I can't really think of any good recipes. Mashed potatoes?

Try topping a baked potato with a layer of miso, followed by a layer of black bean hummus. You can put some buttery spread in the newly opened potato first, and then proceed, or use olive oil, or just the 2 layers.

I love potatoes. What's not to like? They're like a blank canvas waiting to be transformed. Baked, fried, boiled, hashed, mashed, pureed...sliced, diced, curled or julienned!

If you check out the recipe for "No Mayo Potato Salad" that I submitted and has finally been posted, it's a good cold potato salad...without mayo. Very popular here in summer.

French potato salad (this site)--my favorite way to eat potatoes, especially in the summer.

Home fries--lots of onions and spices--I make them rarely b/c I can't figure out how to make them without lots of oil.

Put them in SAMOSAS.

Honestly, I don't like potatoes that much. They're too heavy for me, and I used to get them a lot when people didn't know what else to make for me.

PS--this is the first time I ever opened up this thread, and it was b/c of the praise it got on the "compliment the person above you" thread. This is great!

ETA: I should add that even though potatoes aren't my favorite, I accept that there are some great recipes that use them in Indian cuisine (besides samosas of course). Maybe someone else can recommend. I personally get my potato fill in my samosa then get something with a less starchy vegetable.

Hmmm... I've only made a few things with this weeks ingredient which is CHICKPEAS/GARBONZO BEANS.  I have made Chickpea salad and Chana Masala, both were pretty good but the Chana seemed like more work than it worth.  I've never made falafel and I even have a box of the premade stuff but was wondering what a really good and EASY recipe for it was... along with whatever else you like to make with chickpeas!!!

back to potatoes-we make excellent homemade baked french fries. the frozen ones are awful compared to ours.

Also, they are great in pot pie! Carrots, gravy, potatoes, greens, tvp, inside a flour/oil pie shell.

Chicpeas.....the obvious is hummus. I make it a  lot. Lately, I've been soaking the beans for the first time in my life. Much cheaper, and tastes better too.

Wow, this is an interesting one. I feel like I can't live without chickpeas, but when I actually think about it a really high proportion of them go into just a few recipes (like chickpea salad)

Uhmmm...

One of my starving-student cookbooks had all these recipes for what you could do with a cup of rice. My favorite was a "rice with garbanzo beans" which had spinach, tomato, onion, garlic, thyme along with the garbanzo beans (and cheese, I think, but I leave that out now and just adjust the spices).

Chickpeas are also one of my favorite beans to just put on a green salad. They make anything taste more middle-eastern, so I find they're a nice addition to a vegan "Greek" salad.

There are recipes that look good but that I never make--garbanzo tacos come to mind, and pasta with hummus sauce.

You can toss chickpeas in a marinade/salad dressing and add fresh chopped tomatoes, onions etc. and eat as a salad. Yumbles.

I also bake them with onion, garlic, tomato sauce and chunks of fresh tomato, seasoned with tarragon. Good hot or cold.

One word: HUMMUS.

eta: I only just noticed L2A already said that. oops.

I put chickpeas in most curries/stews, you can make a good thick tasty pasta sauce with them, cook them up in pancakes/fritters... mmm I looove the chickpeas.... and I just happen to have cooked up a big batch on Saturday, so I might have to thaw some and make me some chickpea yumness for dinner tonight :)
