What are your favorite... recipes? (Updated 7/1)

Back again.  I changed the name of this topic that way its not a new whats your favorite everyweek.  For those who didn't look into the last post everyweek or so I'm going to put up a new ingredient or category of food for people to put down their favorite recipes for.  This should help people expand what there eating by seeing what others enjoy.

This weeks item is one of my favorite things to cook.... Lentils!!! ;D
My favorite recipes are

-Amazing and Versatile Rice and lentils http://vegweb.com/index.php?topic=4936.0this is my favorite recipe for lentils... but I don't use any oil instead I chop up a carrot and throw that in with the onion and for spices I use 1 tsp each of cummin, curry powder, cayenne, coriander and 1/2 a tsp of cinnamon and ginger

I only ever tend to use lentils to make dahl, but I really should try to use them for other things.  I tend to find that many recipes call for green or brown lentils but I can only ever find red lentils easily and am not sure if I can sub the different colours.

Having said that my fav recipes are:
Craig's dhal
Indian dal

Maybe in May I will make it my challenge to try a new lentil recipe, yes that's what I'll do - thanks wayne I wouldn't have decided that without this thread!

The one I most often go to is my Traditional Spanish Lentil recipe, which I posted here. When I have red lentils or moong dahl I will make the Delicious Pakistani Dahl.

I also love Lentil Hummus, which is regular hummus using cooked lentils, I also posted a recipe for that here on VW.

Lentil soup is a good option too, though my husband doesn't like it. Lentils are always good.

Someday I must get brave and try Lentil Burgers again, any kind.The recipe I made once (once) in the 80's was awful, I must re-season and try again.

Oh yeah I forgot about lentil soups - one of my fav's (sorry blackrabbit!) is the morrocan lentil one on VW.  Fantastic!

You're welcome Shelloid... Thats why I started this thread.  My only problem w/lentils is that I only ever have brown/green b/c the red ones are way more expensive where I shop!  Maybe we can just trade a bag :>. And I really wanna try dahl I have been eyeing it for a while but haven't had the courage to try it... But will have it for dinner tonite!!!

Lentil Bolognese...no specific recipe, but it's basically slow cooked tomato sauce with caramelized onions, carrots, mushrooms, red wine, garlic and herbs over pasta.  Mmm, I think I'll make that for dinner tonight.

I use green/brown lentils in most of those, but I use red lentils or yellow split peas in dahl, which is my favorite and most-eaten lentil dish.  I use other lentils occasionally, such as black lentils (urad dal) last time I made the Lentil Rice Salad.

Permanentgrin do you mind sharing your recipe b/c this sounds good but if yours sounds better I would like to make it but if its a secret I understand.

In theory I like using lentils in stuff but I rarely do it. I think the only thing I make semi-regularly with lentils is the VWAV Morroccan tagine, but that makes so much that I fill up my tiny shoebox freezer every time I do it :)

Consider halving/quartering the amounts in the recipe.

I have done but there are so many ingredients (especially fresh herbs that I don't usually use up that quickly) that making anything less half isn't really worth it. And that's still four portions!

It's not a secret.  :)  Mine is a bit more specific than the recipe I linked.  Here you go:

1 cup uncooked green/brown lentils
1 cup uncooked brown rice
1 small onion, chopped
2-3 cloves garlic, crushed
1 1/2 tsp ground cumin
2 tsp oregano
1 tsp ground black pepper
1 tsp chili powder (more or less to taste.  I like spicy food)
1 small sweet potato OR 1 medium white potato, grated
1/4 cup tomato paste
1/2 cup flour or breadcrumbs (I usually use whole wheat flour)
salt to taste

Put lentils, rice, onion, garlic, cumin, oregano, pepper and chili powder in a pot with 4 cups of water and simmer until lentils and rice are cooked, 30-40 mins.  Add more water if needed, but you want the lentils and rice to absorb most of the liquid.  When lentils are cooked, stir in the grated potato and cook another 5 mins.  Remove from heat.  Coarsely mash with a potato masher, then stir in remaining ingredients.  Taste and adjust seasoning, then press into a greased loaf pan and bake at 375F (180C) for 30-40 mins or until firm(ish).

(The cumin/oregano/chili combination makes it sort of Mexican flavored.  Sub other herbs/spices if you want a different flavor).

This freezes well (very convenient if frozen in individual slices).  My favorite way to eat it is on a sandwich with toasted bread and lots of ketchup.

OK, this week is a little different.  Instead of a specific ingredient I'm asking what your favorite "burger" recipe is.  The main ingredient can be whatever (the more unique the better!).  So share your experience and maybe you'll find the "burger" of your dreams.

Of course with black beans in them, you know I'd say that! The condiments I don't usually use, but they're good. I pack the burger mixture in a rectangular plastic container in the fridge, and then "slice" off 3/4 inch squares once it's chilled, shape, dredge in corn masa, and fry.

I hope someone posts a yummy lentil burger that holds its shape.

i never really make burgers, but i made barbeque black eyed pea burgers recently.

i thought they were ok, but i don't think they were good without BBQ sauce (which i suppose is ok since they are suppposed to have it, but i wish the burger itself had more flavour). dustin liked them a lot.

and i just want to say with lentils (bc i like lentils more than burgers): tamarind lentils, dahl, ethiopian foods.... anything, really. i really really like lentils.

Its a new week and that means a new whats your favorite.  I just wanted to start off by saying happy mother's day.  Now that thats out of the way... This week's ingredient is RICE!!! ;)b  Rice is very basic and versatile so what do you like to make with it?

Another rice recipe I thought I should add... Curry Rice I don't enjoy this one as much as the others I put but it is good.

I love rice any way it comes. Plain, with olive oil and Herbamare herb salt. Cold, with cinnamon and "milk" and sugar. Dressed up with other stuff. Underneath a delicious curry. Rice. Gotta love it! I know white rice is supposed to be all bad for you but I love it. I have brown rice but DH won't eat it. I've also tried black and red rice and was underwhelmed. Interesting to look at, but not much in the flavour department.
