What are your favorite... recipes? (Updated 7/1)
Back again. I changed the name of this topic that way its not a new whats your favorite everyweek. For those who didn't look into the last post everyweek or so I'm going to put up a new ingredient or category of food for people to put down their favorite recipes for. This should help people expand what there eating by seeing what others enjoy.
This weeks item is one of my favorite things to cook.... Lentils!!! ;D

-Amazing and Versatile Rice and lentils http://vegweb.com/index.php?topic=4936.0this is my favorite recipe for lentils... but I don't use any oil instead I chop up a carrot and throw that in with the onion and for spices I use 1 tsp each of cummin, curry powder, cayenne, coriander and 1/2 a tsp of cinnamon and ginger

I bake mine so they are nice and soft on the inside then eat them w/a spoon. Soooooo gooooood (drool).

Both of these vie for my affection and I can't really decide which is best. I love them both.
Plain baked sweet potatoes with "butter" and Herbamare are delicious. I have always thought that candied yams were redundant. Why make it sweeter than it is?
I love to use sweet potatoes in my chilli too....just smallish chunks cut up and thrown in there.
I like to make spicy fries with sweet potato.
Mixed in with normal potatoes for mashed potatoes - I'm having this for dinner tonight!
But that's about all I do with them.
I've never been brave enough to just have a baked sweet potato. Do you bake them unpeeled? I assume so. How long for? I know they cooked quicker than normal potatoes when I boil them, but would have no idea for baked. I guess just until it feels tender.
I bake them in their skin (wraped in foil) at around 425 F for about 40 min then I flip it and bake for another 20 min or so. This is for a relatively big sweet potato and the time will depend on the size (bigger need longer etc).
I don't even foil wrap them. Prick the skins a bit, rub with a little oil (olive in my case) and throw in the oven until done. I don't bother to turn them usually, though I may if I open the oven to check if they're "getting there." I often bake them around another dish like a casserole or whatever, since I only do 1-2 at a time. Saves energy.
I've been making a ton of spring rolls lately. Take tofu or any variety of soy crumbles, spring onion, a bit of soy sauce, cabbage, and whatever else you want to put in them. I cook all of the filling first, then wrap them in the rice paper spring rolls that you can buy in Asian shops. Delish!
So I finally bought myself some TVP and have a few recipes I'm thinking of trying first. But I want to see what you guys do w/your TVP first so...

I use TVP granules all the time. N likes them as they resemble mince and therefore meat to him. I use them in chilli and in spag bol and shepherds pie and sloppy joes anywhere else you'd normally use mince.
The only time I have really really enjoyed the TVP chunk was in a beef-style stew.

I've never been able to make friends with the TVP we can get here. It smells like dog kibble when dry, and tastes bland and sweet when reconstituted. I could live with the bland, but not the sweetness. I know they used to use it in the 70's for school lunches (probably half and half with ground meat, as an extender) but what we get here is just...weird.
I have used it in chili but I had to really ramp up the seasonings and it just didn't work.

I believe they are granules... they look like flakes. Will be making those sometime this week. Will post results.

If something has sweet potato in it, it's automatically yummy in my book...most of the time at least. Mostly it's just spicy, garlicy sweet potato oven fries in our house though.
New week new ingredient. This week is Nutritional Yeast. My personal favorite way to use it is in the marinade for the tofu sandwich a la new york deli
