Carrot Coins

Ingredients (use vegan versions):

    400 g (1 lb) carrots, in pennies
    1/2 cup olive oil
    1/4 cup white wine vinegar
    3 cloves garlic, minced
    1 teaspoon cumin, bruised
    pinch of sugar

Directions:

Steam carrot pennies until just tender.

Blend remaining ingredients and add to carrots. Chill.

Serve as part of an antipasto tray or on the side.

Variation: You may add thin-sliced red onions if you wish, omitting the sugar.  This is a popular "tapa" or Spanish hors doeuvre in bars in Sevilla.

Serves: several

Preparation time: 30 min

I made this last night for supper using thinly sliced red onion instead of sugar & have added a picture. This is very good.

i dont have red wine vinegar... i have rice wine and regular

which one can i use or are there any other suggestions maybe salad dressing?

If by "regular" vinegar you mean apple cider vinegar, you might add a pinch more sugar because it can be harsh. Or make a small batch (steam a couple of sliced up carrots) and try the rice wine vinegar. And then, tell me how it comes out! Wink

Regular vinegar yabbit says distilled white vinegardilluted with water to 5% acidity its clear in color...
