So what do you do with lemons after you use the zest?

It feels like it's such a waste. Sometimes I need just the lemon zest, then I don't know what to do with the lemon. I've tried saving it in case I need lemon juice, but after you zest it it doesn't take long before it gets brown and hard or moldy. Is there such a thing as jarred lemon zest so you don't have to buy lemons just for the zest?
Juice it and freeze the juice in an icecube tray.

Not in MY baking isle bro. I've looked for it and have never found it. I'll have to try another store or two.
Use the juice in drinks, salad dressing, hummus, sauces, lemon cake/cookies/squares, etc. You can freeze it to use later. OR, if you're buying lemons for the juice, zest them and freeze the zest. Buy Quintess's book...she uses a lot of lemons in her recipes.
I third the freezing... it's how i have all my lemon juice. Living in southern california, we have waves of lemons - there's either too many lemons or not enough. well, in my experience. it's lemon time!
I buy my lemons 5 lbs at a time and we usually use them up in less than a week. 8-)
You can also 'can/preserve' them by stuffing them into a sterilized jar and then covering/filling in the gaps w/ salt.

Add spices and make your own "lemon pickle" instead of lime pickle. Mmmmm. I bet NJA has a few good recipes for this.
after youre done with the zest and the juice you can throw the scraps down your garbage disposal, it makes your kitchen sink smell all fresh n stuff..
