too much fresh parsely!

i bought a bunch of fresh parsley to add into my falafel for a dinner party, but then i forgot to add it. so now i have a bunch of parsley and dont know what to do with it. what are your favorite ways to use parsley or fresh herbs?
A way to preserve it is to dampen it under the tap, shake off the excess water, wrap it in foil and pop it in the freezer. Take out however much you want to use.

is very similar to one I used to make but lost the recipe to that one. I haven't tried it but I have this feeling that it would be good. I'd use silken tofu instead of regular tofu for it.
I'd feed the extra parsley to my rabbit. But that's not a good reason to get a bunny! ;)

Sprinkle it evenly into an ice cube tray, fill w/ water and freeze. Now you have fresh parsley that you can add to soups and stuff, conveniently tucked away in your freezer. This is one of my favorite ways to save fresh herbs. I'd remove them once they're frozen, and put into a separate plastic baggy or container of some sort. You don't want a friend grabbing some ice cubes and getting fresh herbs in her vodka tonic.

It works nicely in green smoothies. I sometimes make a smoothie with spinach, apple, lemon juice, ginger, celery, cucumber, and parsley. It's a really green-tasting one, but good!
I put parsley into hummus--adds a nice little zip to it!

these are all great ideas. i might make some hummus and pesto. mmm. i like the ice cube tray idea, if i get some ice cube trays, i will certainly try it out!
How fortuitous! Last week I bought a bunch of fresh parsley for a recipe and I have a ton left over. I was going to dry it, but instead I will try putting it into smoothies and/or some sort of pesto. Thanks!
Thank you for posting. I have the same "problem" too. Found this interesting recipe for parsley soup that happened to be on a vegan website in the UK called parsley soup. Parsley is alson good on salads, sprinkled on pasta dishes and baked potatoes.

Tabbouleh! I actually use flat leaf parsley as a salad green all of the time, it is really high in iron. I add garbonzos and chopped veg (tomato, bell pepper, cucumber) and then I make a olive oil, garlic, and lemon juice dressing.

delish!! i have a bunch of cucumbers too, i bet those would make a good salad.
