.... mine is marzipan, i buy it ready made. most recipes i find have egg in them (ready made doesnt always depending on brand) anyone have a good vegan recipe for it??

Ya know, I second this inquiry.
I tried to make vegan marzipan a while back using ground almonds, sugar, powdered sugar, lemon juice, vanilla, water and eggreplacer ( i found a recipe somewhere) IT DID NOT WORK!
It never became the smooth, workable marzipan that i adore for decorating purposes. I've actually tried the recipe twice. No luck. I've looked up other recipes online and found a few that use "almond paste" instead, but I can't find it anywhere! Poo
you can't find almond paste? it should be right in the baking section of you're store (even conventional ones have it) but it does not look like you think. it's not in a jar, its a tube. actually, it almost looks like a sausage (a soy sausage of course) usually it comes in a long box. my store only carries one brand, i don't use it often, but it is also good in pie crusts and stuff like that. you can make really good almond cookies with it too.

I agree, almond paste is available in most regular grocery stores-- but I've never seen it in a tube. That would be super convenient, I can see the appeal. But all the almond paste around here is sold in a can, right next to all the pre-made cherry, apple, and berry pie fillings, (along with the weird ones, like poppyseed filling, and sometimes prune puree), in the baking section. Ew, pre-made pie-fillings... why bother making your own pie if you're using canned filling? Anyway, that's off topic. But yeah, try by the pie fillings/baking goods.

Adagio, where do you get rosewater?
i have found rosewater in the supermarket and in middle eastern stores. in the supermarket it seems oto be with the baking stuff or in the international section

i don't know if anyone has a recipe for it or not, but you can also get orange blossom water in the same section as the rose water. rose water is nice, but the orange blossom water is so amazingly fragrant. i have a bottle in the fridge and sometimes i just open it to smell how nice it is. maybe you could substitue orange blossom water for the rose water for some variety? ;)
I assume that almond 'paste' is almond butter, correct me if I'm wrong. I've seen it in little stores, big stores, in fact any grocery store I've looked for it in. It's right next to the peanut butter, in a jar. It is wonderful. I want to make marzipan too!
Almond paste is not the same as almond butter.

would love feedback from anyone who tries my marzipan recipe. it works well when baking traditional german stollen. but also very good for just nibbling on too. it is very pliable.
