high end pastries

I'm a new pastry chef looking to start a business. I currently work in a high end patisserie. We do not offer vegan cakes but often get many inquires. I am wondering.....if you had access to a vegan patisserie would you pay the price for those desserts ($30=6inch cake)? To make it clear the type of work I do is more like art.....no home baked looking product. Just trying to get a general idea from people of all walks of life and location. Thanks

Possibly on a special occassion. How many people does that size cake feed? Do you have a photo?

I wouldn't pay $30 for a 6" cake.  I am sure it is beautiful...but I wouldn't.

Personally I would never pay that much for a 6" cake, but I'm a DIY kind of person.  If you're often getting inquiries about vegan cakes then there is probably a demand for them.  If you don't think there's enough demand to have them on hand in the pastry case you could always have an "order in advance" option.

Why does it need to be that expensive? What ingredients are you having to use? Maybe we could offer some cheaper substitutions? Maybe you could buy in bulk? Where do you live?

I would be down, yes, for a special occasion... Well shit going out to eat period is a special occasion to me! Would you be able to make a vegan wedding cake? Also if it's a bakery you could typically sell it per slice. People might be more willing to pay the price if it's like $3-ish a slice.

She stated that this is more of an "art", rather than an every day cake that you would sit and enjoy on a friday night. I'm sure none of us could touch what she does. Think Ace of Cakes, of similar.

I would probably pay that much for a special occasion cake.  But yes, it would have to look fabulous and taste like the best cake I have ever eaten. 

For me the lure of vegan baked goods that can be just purchased is huge but comes with a sharp hook that if it is not absolutely delicous we will never buy anything at that shop again.  But yes, I did buy a vegan wedding cake and paid as much for them to ship it as it cost, so be aware if its amazing, we will come for it!

This. If you do awesome, polished cake art around a good cake, then sure. If it's just, you know, cake-filling-buttercream with some piped lettering, probably not. I can't really make a call without seeing a sample.

That sounds like a very reasonable price for a piece of art cake. I don't know if I'd buy one myself, but like pg said, if people are asking for them then there is a demand. Go for it!

i'd pay that much if:

- special occasion (few times a year, more if i can get non-vegan relatives to go for it)
- artful-ness.
- tastiness

For cakes, I'm superficial: I care more about the decorations (cool fondant designs, being able to do something functional with buttercream, etc), than some fancy flavor. I'll take a good chocolate cake with a fancy exterior over a fancy odd flavor with just plain ole icing.

I would love to have more options like that around me! I'd pay that much, but it'd be for special occassions...unless it was on my way home from work or something and then it might be every couple nights. I'm a big fan of good cake.

I wish I had a professional cake decorator around here that made vegan cakes for special occasions.  I'd like to get a nice looking cake for my daughters birthday for example.  Delicious I can do, but not pretty.  Beyond that, most of the schools require a cake/cupcakes/snacks to be sealed in a box or a bakery package to be able to serve them in school.  Homemade goodies aren't allowed to be distributed to the class.

I wish I had a professional cake decorator around here that made vegan cakes for special occasions.  I'd like to get a nice looking cake for my daughters birthday for example.  Delicious I can do, but not pretty.  Beyond that, most of the schools require a cake/cupcakes/snacks to be sealed in a box or a bakery package to be able to serve them in school.  Homemade goodies aren't allowed to be distributed to the class.  

*this* i like to try and make nice looking cakes, I've even taken a few classes @ whole foods, but mine always look boring or like crap.  Its a learing curve, I think a lot of it has been my 'buttercreams' being too liquidy or something. The homemade rule is the same for the public school out here, and has been since I was in elemetary school.

I would pay that much for a fancy/ good tasting cake for a special occasion!
