Class cooking demonstration

On Friday I have to give a 15 minute cooking presentation in front of class. I'm not sure sure what I want to make.
The last girl did crepes, another one did raw stuffing.. there's been a few cool ones.
If you had to give the presentation, what would you make?

I'd show em how to make a good nooch sauce....and then serve little plates of nachos and "cheez" to everyone. My favorite recipe uses cashews and pimientos.
For any other student that would be great, but I have made so many nut/ny cheeses in that class, they would all make fun of me if I stuck to my regular bag of tricks. Hmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm.
I made the Portabella Mushrooms in Puff Pastry from this site for my demonstration. I go to a different kind of culinary school than you do though. I had to pick something that would work for omnis.
Right now I am working on vegan chinese dishes for a buffet and for another class I am working on Cherries Jubilee for table side presentation offering both omni and vegan choices.
I look forward to reading about what you decide on.

I would assemble a beautiful little tart. You can briefly go through the steps of making the individual tart shells, then make a nice little custard, then top it with fruit and/or chocolate or whatever.
I know you're really into raw, so maybe a raw soup? This would be fun for a 15-minute preparation, because you could go through the whole process in real time and spend some good time making gorgeous garnishes.

It would need to be something impressive yet simple enough that I can talk while I prepare it. I still have no idea.. your raw soup idea is cook but it involves the VitaMix which I always use (because I'm king of it). Hmm, maybe something fun with the spiralizer and mandolin? It could be anything (dessert, appy etc). The tart idea has potential.
You could go seasonal which would give you something to talk about besides directions, maybe? Soup would be awesome for that although I imagine presentation would end with "then, um, put it in a bowl" so I'm not sure how impressive it would be visually.
Can you get your hands on a chinese mandolin? The Iron Chef Carrot challenge had Chef Cora make canolli using carrots cut on one.....I've been obsessing about them ever since. They could be filled with some kind of cashew cream. Just an idea?
I ended up making Coconut bacon! It was really well received.
I made a raw version (dehydrated) that I brought to class, then baked the cocobacon that I made in front of the class. Everyone was really surprised how much it tasted like Bacon and saw it as a good way to ween someone off of it.
Scoop out the meat of a coconut and cut it into strips
Toss in a bowl with liquid smoke, maple syrup, salt and nutritional yeast
dehydrate for a day or put in the oven at low temp for about an hour, flipping at least once.
The look, texture and taste of the coconut strips are very similar to bacon. Others in the class could not tell it apart from real bacon.

yeah - even though i hate the taste and texture of shredded coconut i would totally try this... but only if someone else made it for me, cus i'd be too lazy and really wouldnt want all that coconut around..
Combining the cocobacon with homemade veganaise into a BLT is so delicious. For the veganaise, just use a high powered blender like a vita mix, and put in like a cup of nut milk (almond/rice/whatevers) with some cider vinegar and a tiny bit of mustard, agave, salt and garlic.. and then slowly pour in oil while the blender is running to emulsify it! It gets really thick like veganaise from a jar, and tastes better than veganaise. Put it on some Gluton free bread and you have a healthy vegan soy-free, gluton-free, dairy free BLT :)

You have completely changed my life. I made these tonight. I added a bit of black pepper. They aren't finished yet and nearly half the batch has been picked out. Dear god, these are amazing!
