Eating Out Mexican

For a fast and healthy vegan meal, I like to go to Baja Fresh.  I live in California and there are several locations all over the state, check their website for locations in your state.  I find Baja Fresh a better option for me than Taco Bell.  I like fresh food, not processed salty items, which is what Taco Bell serves.  The price is right at Baja Fresh, especially if you are a broke student like me, and you tend to get enough for two meals.
This is how I order
To get the meal the way I like it without any problem.  I order the side salad without cheese and tortilla strips. Then I add guacamole (which I order separately), and the chopped cilantro (from the salsa bar) on top of the salad.

I order the beans & rice plate with a side of grilled vegetables (onion, red & green bell peppers); I have the grilled vegetables placed on top of my bean& rice plate.  Also, I order corn tortillas

I fill my cup with water (I like the Baja Fresh plastic cup; it has a straw, and a top that prevents spillage).  I also get salsas and pickled chilies from the salsa bar (it has an assortment of salsas, chopped cilantro, chilies, limes, and pico de gallo).

The best dish to order there is the Bean & Rice bowl. It comes with Black Beans cooked in veggie broth, Mexican rice, Enchilada suace, tomatoes, guacamole and tortilla chips. It is seriously HUGE! and all for about $10, it usually last me 2-3 meals/snakcs, YUMMMY

I'm a huge fan of Moe's Southwest Grill - its almost identical to Qdoba, but 10 times better!
I get the "Art Vandalay" in a bowl - rice, beans, pico de gallo, guacamole, jalapenos and tons of hot sauce...then I mix it all together and dip tortilla chips into it.....
Great, now I have to go get it tomorrow for lunch.....poor me....

we have Salsaritas, Qdoba, and Baja Fresh. I love them all.  I could basically eat the salsa with a spoon, which freaks my friends out!

i love that rice and beans plate from baja fresh - you just gotta tell them no cheese or else they sprinkle some on top.  i add the pico de gallo & salsa from the salsa bar and im set - for like $1.85.  Rubber1 - if you're watching your sodium you should check out their websites nutrition information, baja fresh actually has alot of sodium.  according to that book 'eat this, not that' baja fresh has more sodium than anybody.. but it tastes so good!

Willy's Mexican Grill is awesome - they have veggie burritos and marinated tofu burritos.  ive only seen them down south though.

as much as i hate taco bell i do get my mexican food fix there when i am too lazy to cook or drunk. (no i am not the one driveing there)

I think Chipotle kinda sucks. I am a fan of homestyle Mexican cooking, but it's hard to find vegan options when it comes to that. Almost all enchilada sauces are made with chicken or beef stock. Same with rice. Be careful, kids and make sure you do your homework.

but, OMG!! I LOOOOOOOOOOVE Moe's!!! Unfortunately, the ONLY one within a 30+ mile radius of me closed a few years ago. Yes, I loved to order the Vandalay streaker (if I remember the options correctly) (this was my original intention for a post...)

really? i will definitely eat there more often then..... i just hated to think i was filling mcdonalds' coffers!

There is a Mexican restaurant in the town where I live. I went there for dinner one evening with my husband, ordered a taco salad, and told the waitress that I didn't want any meat in it. I was so delighted when she said "do you want avocado instead?"

I was so looking forward to good mexican food when I moved to Texas a year ago but have been sadly disappointed that there's none I can eat.  Everything's cooked in lard...even the tortilla chips.  :'(  So I've had to settle for making my own.  Whenever my twin visits from Michigan she brings me down guacamole from my favorite restaurant.  Yay for twins!!

There's this great little restaurant right down the street from me. The have a few vegan options actually! They have a vegan salad which is really interesting: It's basically lettuce with a lot of birrito toppings on it like beans, rice, guac, chirizo tofu, and salsa. It's amazing though! They also have a vegan chirizo tofu burrito which is called "vegan chirizo". I have asked them several questions about their method of cooking and their "vegan" things actually are vegan which is a problem a lot of the time, at least for me. As long as they don't cook in lard it should be fairly easy to make something at a Mexican restaurant vegan. You just have to make sure than the re fried beans don't have bacon fat in them (like Aztec drill) and they sometime use eggs in a certain type of burrito that I can't think of the name right now.

I found an awesome Mexican restaurant in Portland. Maine that offered tons of vegan friendly options and soy cheese! i miss it :(

El Torito will make a vegan veggie burrito for you if you ask.  They also serve frijoles de la olla so there's no lard involved :)
