Taco Party!

This summer I've been planning to host a taco party for a bunch of people and would of course love for it to be all vegan, but we'll see what others bring to the fiesta.
Just wanted to get some feedback from you all: what is your favorite vegan taco filling?
So far I'm thinking of a lentil one, maybe a mushroom one, and playing with some of the seitan ideas in Viva Vegan. Any other thoughts or favorite vegan Mexican sides?
The garbanzo tacos on VW are great!! Even my picky omni hubby likes them.
I like chik'n style strips in sauce as a filling.
There's also a recipe for a easy homemade kind of refried beans that is great in tacos or on the side.
And my fav. sides are pico de gallo, guacamole, spicy salsa, corn, and of course queso.
Refried black beans and thinly sliced portabellos fried with garlic, avocado/guacamole, diced tomatoes, sliced peppers, hot sauce and cilantro.
two words: TEMPEH TACOS!!
Lentil tacos are always great, and so are chickpea tacos. Just spike everything in taco-esque seasonings.

if i had a taco theme i would def stuff tacos with fajita veggies (bells and onions (even shrooms) with taco seasoning), i would also maybe do some viva vegan seitan recipes if i was feeling "gutsey" with omnivores, shredded lettuce, diced tomatoes, vegan mexican flavored ground "beef", refried beans, toffuti sour cream, guac or avocado slices, salsa or pica de gallo (or both)...
i also have a recipe for tofu tacos on this site that would be a great filling for tacos as well :)

Chipotle sweet potato Quesadillas with corn tortillas and pepperjack daiya.
Taco casserole with layers of tortillas, cumin spiced black beans, salsa, daiya or dragonflys cheezy sauce, veggies... yum.
Mexican lentil soup with garlic onions, stewed tomatoes, lentils, water and home made taco seasoning, so easy and delicious.
Lentil taco salad with lettuce, tomatoes, peppers, red onions, tortilla chips, daiya, with salsa and guacamole.
Diced potatoes, bell pepper and onion sauteed in a little oil or broth with paprika, salt, pepper, fresh-squeezed lime and cilantro.
Black beans, corn, pico de gallo, a little red wine vinegar, cumin, lime and cilantro. Garnish with chopped lettuce and avocado slices.
sweet potato & mushroom would be good. id eat it. i also had string bean tacos at a restaurant once, they were cooked up in a spicy sauce.
maybe make some horchata too?
Lentil tacos are my fav.! Lots of yummy add-ins, and taco seasoning with Tofutti sour cream!
I love mixing the morning star veggie "meat" crumbles with mojito lime seasonings, corn, "cheddar cheese", homemade salsa, spinach, and of course tomatoes. Best tacos to ever be created in the whole entire world. Gawd, I want tacos so badly right now.
Sounds like tempeh tacos will have to make it on the menu! I also love the idea of making some horchata.
Thanks for the suggestions, everyone! It's still a few weeks away, so I'm still open to other ideas :)
