Just curious. I hear people using both the soft "J" version and the hard "G" version. I'm not sure which one tends to dominate in standard usage.

VAY-gun grates on my nervous.
Thank you! Ugh. When he talks to me, my uncle pronounces it "vay-gun" like it sounds more sophisticated, but really... It just bothers me. I always feel rude outright correcting people, but I definitely try to work in the "real" pronunciation a few times during our conversation! :)
Also, I've never heard it pronounced with a "j"... I hope I never do. ;)

When I look at it I think "vee-gan" but it doesn't correspond with how one pronounces "vegetable", with a "j" sound. ???

I say "say-TAN" with an abnormal and extream emphasis on the TAN part...so nobody think I'm talking about ol Lucifer.. :(

lol...I voted Other, and here's why:
Although it's very similar to , as most ppl are voting... I say , in which the last syllable is ever so slightly brighter than in the word "gun".
(I'm an opera singer with years of training in diction and foreign language pronunciation...of course I'm going to be picky!) ;D

We call it "vedge-web." It never occurred to me that there might be a different way...also thinking of "vedge-tables." However, we do pronounce "vegan" VEE-gn. Come to think of it, that's all kind of weird, isn't it. :D

Very simple, follow the rules of phonics (FYI, I haven't done this for quite a long time but I think it's right.)
With "vegan" there is no question.
Vegan (ve-gan) Ve = open syllable; which means long 'e' sound gan = closed syllable; which means short 'a' sound
VegWeb Veg = closed syllable; which means long 'e' sound or if it's from the word 'vegetarian' or 'vegetable' it's CVC-e which also makes it a long vowel sound
Seitan (Sei-tan) Sei = open syllable ending in a diphthong; Long vowel sound tan = closed syllable; means long 'a' sound Although... this could depend on if the word is english or not, but I the exact etymology of seitan is not known. So if no one knows where it comes from you could say it however you like... at least far more so than vegan.
