(NVR) Where should we go?

My 5th wedding anniversary will be in June and I will also be graduating then.  We’re planning on trying to have a baby shortly after that, so my husband and I would like to take a special trip to celebrate with just us before we have a baby in tow.  Our vacation will probably be about a week long.  Here are some thoughts I’ve had:

1) We love the outdoors and outdoor activities and are also science geeks—interesting geology/biology would be a plus
2) We live in Las Vegas where it is very hot in the summertime and would like some milder summer temperatures (say, not climbing much above 90 degrees F would be great).
3) Availability of vegan food.
4) We don’t really like shopping and don’t care if there are shopping areas or not.  I won’t buy anything on a vacation that I can get in Las Vegas.
6) We are budget conscious and I have set aside about $5000 dollars for this trip (including air travel)—great if we could get away with less.  I prefer to spend most of my money on activities as opposed to accommodations—as long as the place is clean, I don’t really care where we sleep (we’d maybe make an exception for a few vegan bed and breakfasts I’ve had my eye on—anyone ever stay at one?)
7) Staying in the US would make things less complicated, but we would be open to going outside of the US for the right location.
8) I haven’t decided if I want a city vacation or a more “wild” vacation—we enjoy both types, assuming there is more to do in the city than just shopping.

Ideas? 

Have you considered a trek up the Appalachian Trail?  You can go for as long as you want and pick it up or drop it near several cities (like Asheville).  These mountains, even in the extreme summers don't see 100 deg (although we had a few 96'ers in the valleys this summer...but that was highly unusual; according to the record books, my town's never seen 100).  you'll spend a grand and can invest the rest into baby clothes  ;)

It's supposed to be beautiful in the summer & has lots of nice parks & wilderness. I have a friend who went backpacking there with her boyfriend and another friend (who happened to be an ordained minister) and they came came back married! He proposed to her while hiking up a mountain and they got married at the top! crazy huh? Anyway, I think that sounds nice.

I just got back from Asheville.  A nice little city with good shopping and extremely veg*n friendly.  There are mountains, hiking and nice scenry nearby.  Definately within your budget, but don't know about airfare.

i second seattle!
well, i'm a little partial cause i live here, but there's so much stuff to do, camping, kayaking, hiking, etc as well the city, which is so amazing. there's tons of vegan-friendly restaurants, and even non-vegan restaurants have substitutes. june is also when the weather starts getting really nice (meaning it has stopped raining) and would be a nice cool break from the desert sun, i'm sure.
also, vancouver is about a 2 hour drive north, and portland is about 3 hours south.

I agree with Nutdragon!
Right now I  live only a few miles away from where the trail starts....I hike/run on different sections of the trail all the time.....almost daily.....I have to say that from talking to those that have done the whole trail (or most of it)....it's a "life changing" experience .....a good one! ;)
