Ha! I just had this little debate with myself as to what to do with my eggplant!
So for my dinner tonight I had eggplant pomodoro It was good!! I preferred my bits without the sauce on it, so if you make it don't put the sauce on top, just in case you prefer it without the sauce.
My standard recipe to make with aubergine is quintess' addictive eggplant chips - they really are the best ever - the only reason I didn't make these again was because I had run out of soy sauce and was too lazy to go buy some.
but looking at CK's idea that looks super yummy too (bookmarked, thanks CK!)

Dude, it is really good. And it's low fat! Talk about a win-win.

I actually bought 2 aubegines at the farmer's market and have only used one up, so I think I'll try your recipe with the other one. Such a shame N doesn't like aubergine and I'll have to eat it all myself ;)

Wow thanks guys!! That eggplant pomodoro sounds amazing... I wonder if I could use regular marinara sauce instead? I think I might try that... mmmm the chips look good too though!
Unfortunately I don't have the right ingredients for the chinese recipe but I will bookmark it as well!

merryweather, I didn't use the sauce in the recipe, so I'm sure whatever sauce you have will be fine.
The chips are really really addicitng.

Awesome, Shells! Just watch out with the ginger, I used powdered and put a little too much in, so it was spicy! But I like it spicy! >:D

Eggplant Pomodoro is in the oven!! I didn't have bread crumbs so I used flour with Italian spices instead... we shall see!!
