I third it and my dad fourths it! Everytime I see something that looks especially well prepared I think "cheflindsey?" and a lot of times it is. Not that there arent LOTS of other good vegweb photographers, there are. But shes a cut above the rest. Shes got the lighting just right and the food is designed perfectly. They look like they have come straight out of a cook book! I don't think Ive seen her post in the forums....maybe she doesn't know there are any? Someone should message her and see if her ears are burning. My dad was a professional photographer and HE is quite impressed, they say food is one of the most difficult things to make look good in a picture. I wonder if cheflindsey has had professional training or is just wicked talented?

I have an entire restaurant concept of mine that I came up with, including the menu, recipes, cost out of menu items, decor, etc), and I'm trying to decide if I want to sell the whole concept to someone else or be a partner in it. Unfortunately, it isn't vegan or even vegetarian.
I'm sorry to hear that. It's a shame that such a talented vegan chef would want to profit from, and encourage, animal exploitation for food. I do hope you change your mind and open a vegan restaurant or bakery instead!

Wow...that was kind of uncalled for. My love is cooking and recipe development, and while yes, vegan foods are my #1 interest being one myself, I am a well-rounded chef who appreciates all foods and cuisines and respects everyones choices when it comes to their diets. I am not trying to "profit from animal exploitation for food". Food, cooking, and what it means to people is my passion. I worked incredibly hard on this for many years, and so yes, I hope to see my vision come to life. Thank you.

I'm guessing there are very few (if any?) vegan culinary schools, so I'm sure most professional chefs (even the vegan and vegetarian ones) had to go through tons of classes of meat preparation, creating desserts chock full of dairy and eggs, etc. I think we've discussed before on here about how some of us work in not-so-veg-friendly careers and I don't think that means that we are profiting from animal exploitation. Everyone does what they can and every small step is important.

There are actually vegan culinary schools; I hope to attend this one: http://www.chefal.org/index.html I, myself, would never put myself in any situation where I would have to learn how to prepare meat/handle meat at all..so I can understand where livingvegan is coming from. But, that doesn't mean you can't make your own choices. Everyone has their own "line," and I've learned that is too difficult for me to compromise my own beliefs in a world where I can make my own choices. Everyone is different! But, you should definitely pursue whatever dreams you may have. :flower:

I'm sorry...but I need to point this out: 1) this place is not an ACCREDITED institution 2) w/ the exception of MAYBE one in NYC and another in Europe (there may be one or two in NZ/Australia) that I'm not aware of), there aren't schools that offer Vegan/vegetarian culinary DEGREE programs (which chef lindsay has gone through) 3) it is soooooo hard to go through classical culinary schooling and be a veg*n!! you think regular omnis give you a hard time about your food choices??? try being told that "you couldn't possibly know proper flavoring b/c you refuse to eat/cook/taste"!!! 4) I thought we weren't going to be the veg*n police on the boards.....this was quite a welcome for the first board posting of such a vegweb asset!!!
lindsay, I, for one, am proud of you! It is for these reasons that I chose the "easy" way out and decided to go the route of studying restaurant mgt, so I didn't need to cook meat all the time....

I think your work is very important, lindsay! Your restaurant will be a great environment for showcasing the tastiness and beauty (as your pictures reveal!) of plant-based foods to an audience which does not normally see them portrayed as such. There is much to be said for breaking down this barrier between meat eaters and non meat eaters.
You clearly have a wonderful talent for creating food, presenting it beautifully, and knowing what people like! It is great that you can use these talents to promote vegan cuisine even though the path and infrastructure by which you reach this goal is challenging. None of us is expected to perform epic feats of veganism. I am sure that your fabulous recipes will have a positive effect on meat eaters and veg*ns alike! They certainly have here.
These forums are about celebrating vegan food and vegan living. Vegan policing is certainly not in the spirit of this forum and is an invitation for trouble. We know this from experience. Lest we forget, folks.....

Well, I did not think my comment was at all "vegan police." I just posted the link to the school that I was interested in as a "vegan culinary institute"-which it is. I did not say anything else about it, and did not try to say that it was an accredited institution. I was not at all personally attacking Lindsay (and I almost typed something of that sort, but thought it would be understood). I was just sharing my point of view, and where my line is. I even said she has the complete right to pursue her dreams. I wasn't at all putting down anything that Lindsay has accomplished. I believe I said "I" plenty of times in my previous post, and did not state anything that Lindsay should/should not do. I very much celebrate vegan food and living...and was definitely not trying to "invite" trouble. :'(

OMG you should totally do a Food Network show! Then I'd have to get cable ::) I think it would go over well if you marketed it well--like going about it from a health perspective would probably be your best bet. Also, the whole "go green" thing seems to be trendy right now, and veg*nism works right into that, so that's another angle.
