When you go to festivals, carnivals or just even getting something from a street vendor what kind of vegan food would you like to see offered?

I'd just be amazed to see anything vegan that wasn't some sort of drink or fries cooked in the same oil as something nonvegan.
vegan hotdogs with things like a fieldroast or tofurky option with crazy dogs like a saurkraut german dog, a cajun dog, a rice and beans dog... take a tip from cyber-dog's menu in seattle <3 <3. http://cyber-dogs.com/ I've actually seen vegan hotdog carts at a festival here with a long line, looking like they made out fine with about $4.50/dog. Some lemonade, honest tea, maybe sweet potato fries, maybe Alternative Baking Co. cookies and that'd be my first stop.
Also I've seen noodle cups work well at festivals. Some vegan thai noodles in a compostable cup would be good. Really good rice and veg bowls. Peeled mangos on a stick. Summertime home-made frozen berry fruit pops. vegan savory pocket pies- italian, curry and shepherd's.
Also, I've been thinking this for a while but I really want a streamlined sushi cart at a festival. It's cold, it's fresh, small, portable... delicious. Vegan handrolls, summer rolls, cuke, carrot, and avocado, pickled veg, maybe some daifukus. It'd be a nice alternative for everyone who doesn't feel like a funnel cake.
i would LOVE to see vegan ice cream!!! seriously...on a hot summer day i would NOT be able to resist!
Is this a wish list? Are you thinking of opening a cart? How great.
Number 1 item I miss are Greek gyros. I used to love them. Would love to see a cart that offered them along with some appropriately seasoned seitan and all the right toppings.

I got some vegan ice cream from an ice cream cart on a hot day this past summer. Granted, it was at a vegan festival, but still, it exists! I like getting cotton candy, too.

Yes! This exactly! Add vegan ice cream and I'm sold!
Portland is the vegan food cart mecca. Great stuff here...
Holy crap, I had a vegan corndog at the Green Festival in SF this weekend. Amazing!!
