Please help me use up Ingredient X.

Ahoy folks! I thought I'd start a thread where you can ask for recipes and advice on how to use up an ingredient (e.g. a vegetable, fruit, grain, bean, etc.) of which you have lots and lots and lots; or which is new to you and you don't know where to start with it.

I'll go first. :P I have many, many tasty carrots from the farmers' market which I need to use before they go soft.

Recipes, please.

I know, I know, carrots - simple - should be a no-brainer... but I was not fond of them for a long time, simply because I'd never known anything but raw or steamed carrots with very little flavour. I like to do INTERESTING things with them. They're so adaptable! Gimme your adaptations! :D

Anything you want to colour yellow, like "saffron" rice. Saffron is mongo expensive so turmeric is a good sub.

I make whole wheat pasta with vegan feta (or something else salty and briny), red onions, green apples, and toasted walnuts.  I usually make a thickened veg broth for the sauce, but olive oil would be more flavorful.  Maybe even a toasted nut oil if you don't like EVOO?

Erm, did you mean to say red cabbage... or did you think I'd said red onion? ;)

Shred finely and dress with a "mayo" thinned with lemon juice and a tiny bit of prepared mustard, cracked pepper. Sprinkle sultanas and pine nuts over all.

Yeah, yabbit - some kind of coleslaw is definitely in my cabbage's future. I like to make a creamy cashew dressing instead of mayo. :)>>>

I cooked quarter of it, shredded, in a sort of Moroccan harissa, veggie & chickpea bake last night, which I had with couscous. Boy, was it colourful! :D And not like the kind of food I usually make, which is cool. It was surprisingly sweet!

This guy was just telling me about all the amazing health benefits of turmeric.  I use it in curries, but any other things I can use it in?

tofu scramble, to give it that yellow scrambled egg color.
I also put it in chili

ive seen it in mac & cheeze recipes to up the yellowy color too.

stale cornbread? I have half a pan that didn't get eaten or covered(gasp!) What to do besides toss it?

baked cornbread "pudding"--Cube it, put it in a casserole dish, add veggies/beans (thinking maybe cubed sweet potatoes, onions, and black beans?) some soy milk, spices, and bake it 'till it gets all mushy goodness

Or, if you're lazy like me, put it in a bowl and add some black beans and salsa, and it won't matter that it's stale...

Whirl it in the blender to make breadcrumbs. Or dice it and make "stuffing".

Carrots- Blend with tomatoes to sweeten a tomato sauce

MmMMmmmm I just wanted to add, that I have gotten into the habbit of adding two large carrots to my tomato sauces and YUM it is SO tasty!!

stale cornbread - crumble some into a bowl, pour soymilk over it - plain or mixed with nesquick or something else to make it chocolatey, add some sliced strawberries, slivered almonds, and microwave til warm.  eat it for breakfast or dessert.  it sounds weird but it's actually really good.  trust me!

Cauliflower? Sean's mommy gave him a head of cauliflower. He likes Indian food, so maybe something Indian? But not spicy..I'm a wimp  :-[

those cauliflower poppers are really good & easy.  indian wise - you could make aloo gobi.  it's a dish with cauliflower and potatoes.  it's delicious and the ones ive had havent been spicy.

I have an Indian friend who makes battered and deep-fried cauliflower.  Cut the cauliflower into florets, then make a batter with flour (chickpea/besan flour if possible, but wheat flour works too), curry powder, salt, water, and any other spices you like (chili powder, ground cumin, whatever).  The batter should be about the consistency of pancake batter.  Coat the cauliflower pieces then deep fry until golden.  Not healthy at all, but insanely good.

Besides Indian food, I also like cauliflower raw in salads or cooked in a stir fry or thai curry.  I've also seen it used as a low-carb potato sub in things like potato leek soup or mashed potatoes (mashed cauliflower).  Never tried that though.
