How should I use up this cabbage?

I have half a head of green cabbage that I need to use. I suppose I could steam it or saute it with peppers, onions, and tofurkey sausages, but I kind of want to try something new. I made a stir-fry with the other half last week, so I don't really want to do that. I looked at the cabbage recipes on here and nothing really jumped out at me. So, what are your favorite cabbage recipes?
You definitely need to make an ethiopian lentil dish with cabbage, onion and potatoes. And don't skimp on the hot peppers

Both of those dishes were really good! I'm a real wuss when it comes to spice, so I didn't add any chilis to the lentils, but I did add a little chili powder. Such nice flavors in both dishes!

I've bought a head of cabbage every week for like the past two months. I'm in a cabbage craze lately. I love to steam it with a bit of garlic, curry powder, garam masala, turmeric, black pepper, sea salt, apple cider vinegar, and a bit of agave nectar to balance out the tanginess of the vinegar. It's delicous! I don't know the exact measurements, as I usually just keep adding until it tastes just right. I've made it with red cabbage as well, propinecone, and it's just as good! :)

Sure! A cabbage is a cabbage. Some people are turned off by the colour of cooked red cabbage but the flavour is basically the same.
I'm not cabbage-adverse, but it isn't something that finds its way onto my shopping list too often. But tonight I had baked cabbage at a favorite vegan spot in town and it was way good! From what I could tell it was just a quartered head of cabbage seasoned with some tamari and baked until it was browning and sweet on the outside. It tasted a lot like roasted cauliflower and got big thumbs up from my kiddo. I'm going to make it at home soon!

I can cook the rice and lentils together (I did it the other day to make lentil rice balls, it worked great!), and there is a steamer basket for the top of it I could steam the veggies/cabbage at the same time.
Wow that sounds good! And cheap. Right now I am trying to cut my food bill down, meaning eating a LOT more beans. I may try that and report back.

I made my own spring rolls recently. You can get a huge pack of the rice papers at our local Asian store, so I made a filling of tofu crumbles, cabbage, red pepper, and spring onions. I spiced it with a variety of ginger, garlic, and gluten free soy sauce. My husband and kids ate them up!
