Spanish Slaw

Ingredients (use vegan versions):

    1/2 large white cabbage, shredded
    1/2 cup sultanas or white raisins
    1/4 cup pine nuts
    1/3 cup olive oil
    1/3 cup balsamic vinegar
    1/4 teaspoon ground cumin
    sea salt to taste

Directions:

Soak shredded cabbage in iced water for about 15 minutes to remove the sharp taste.  At the same time, cover sultanas with warm water to plump them up; drain and chop.

Blend oil and balsamic vinegar with cumin, add sultanas.

Drain cabbage and dress salad, salting to taste. Chill.

Makes an excellent side-dish.

Serves: 4

Preparation time: 20 minutes

I totally changed this around to fit what I had.
I followed the recipe but used:
Raw Almond slices
White Balsamic Vinegar
Regular Raisins
cumin+ dash habanero powder (it's like ground red pepper)

I'm letting it sit overnight to absorb the flavors but so far I'd say yum!
I'll add a bit more cumin next time and be sure I shred the cabbage much better.  Smiley
I think a nice addition might be chopped apples...? But that's just me!
