Spanish SlawIngredients (use vegan versions): 1/2 large white cabbage, shredded
1/2 cup sultanas or white raisins
1/4 cup pine nuts
1/3 cup olive oil
1/3 cup balsamic vinegar
1/4 teaspoon ground cumin
sea salt to taste
Directions:Soak shredded cabbage in iced water for about 15 minutes to remove the sharp taste. At the same time, cover sultanas with warm water to plump them up; drain and chop.
Blend oil and balsamic vinegar with cumin, add sultanas.
Drain cabbage and dress salad, salting to taste. Chill.
Makes an excellent side-dish.
