Favorite vegan sandwich?

As per the title, what is your favorite vegan sandwich "stuffing"? (I can't seem to figure out what to replace my tuna and egg salad sandwiches with and could use the inspiration!).

Lubi, that sounds great. My version of that has roast red peppers instead of tomato.
My fave: Tofu Gan (smoked pressed tofu) split open, roast red peppers, lettuce and mayo on wholegrain bread. Any sandwich needs wholegrain bread.
For a dessert sandwich, bananas, brown sugar and walnuts on "buttered" wholegrain toast.

I like to chop up seitan (homemade or otherwise) into little cubes and mix with veganaise, celery and dill relish. Closer to chicken salad than tuna, but deeeelish. you could probably add grapes and pecans if youre into that sort of thing. Ive also done it with chopped up lightlife chicken strips.
Especially good in a tortilla with lettuce and tomato.
Oh! Also tied for favorite sammy is a tomato sandwich which I have loved forever and ever since I can remember. Basicaly, toast, mayo, sliced tomatoes and salt. So easy and SOOOO good!
I'm experimenting with chickpeas, mayo and grated carrot as a sort of un-chicken or un-tuna sandwich spread. I can't figure out the best seasonings. I will leave you know.
Guac, mustard, sprouts, tomatoes, carrots, smart bacon, tofurky.

yezzz that reminds me of that grilled avocado sandwich... i like 1 side of the bread vegan mayo, the other side vegan cream cheese, add avocado slices, and grill like a grilled cheese... serve with ketchup, i'm in heaven!
I don't make this myself but I get it from my local co-op. Tempeh, veganese, sprouts, tomato, dark lettuce (probably romaine) and I think that's all- vegan BLT.
ok sandwich breakthrough:
you know those "chicken" breasts that come with the gross tomato sauce that they happily now package seperately? break those apart with a fork (uncooked) and mix with vegenaise and dill relish. tastes EXACTLY like the tuna sammys my grandma used to make when i was a kid. she used the whole chunk white tuna, not the mushy dark meat kind that looks like catfood... i imagine this probably doesnt taste like that. it was spot on. the only thing missing was the smushy white bread that i never buy anymore, but honestly missed for a minute, just for this sandwhich. im really on to something!
OK, so in the end what I invented came out tasting more like "egg" salad than chicken or tuna but it's still so tasty! I just submitted the recipe but that doesn't mean I can't share it here. I just ate this for lunch and am still so excited I had to share immediately. The basic idea has been pulling my sleeve for days and I finally worked it out.
"Egg" Salad Surprise
Ingredients :
1 cup garbanzos, drained and mashed
2 medium carrots, grated
1 cup crushed pineapple, drained Well
1/4 cup vegan mayo
1/2 teaspoon sharp creamy mustard
Herbamare herbal salt
Pepper
Directions:
The chickpeas and pineapple must be drained well so that the mixture doesn't get watery. I drained my pineapple in a sieve lined with a paper towel.
Combine mashed chickpeas and grated carrot. Mix in mayo, mustard and Herbamare to taste. Blend in the drained pineapple and top with a twist or two of freshly-ground pepper. Chill.

Can't get onion powder or celery salt here. And only powdered celery root.
Herbamare is a mixture of sea salt and pulverised herbs. I think you can get it in the US at an HFS. Vegesal would do as well.
And yeah, the pineapple is the "surprise" part. Try to get one in juice, not heavy syrup. It adds a little sweetness to counterpoint the mustard but it shouldn't dominate.

Basically it's a BLT with dried dulse replacing the bacon. Surprisingly good!
Grilled portabello mushroom, arrugala, asian/sesame dressing, whole wheat bun!
My most favorite sandwich is a breakfast sandwich. Bagel, oven fried tofu that was marinated in ACV & Black Salt, Tofurky Peppered slices, slivers of smoked chedder Sheese, homegrown tomato slices, fresh basil leaves, few strands of chives or scallions. One can put ketchup on the bottom bagel or Tofutti Better than Cream Cheese on the top layer, but either with or without is delish!
Sprouts, avocado, cucumber, tomato, simple braggs-baked tofu cooked with sesame seeds. so freakin good
