Favorite vegan sandwich?

As per the title, what is your favorite vegan sandwich "stuffing"? (I can't seem to figure out what to replace my tuna and egg salad sandwiches with and could use the inspiration!).
My replacement for tuna is:
Chickpeas
Veganaise
Yellow Mustard
Dill relish
Salt and pepper to taste
I use a can of chickpeas, drained and washed. I then use a fork and much them, add the rest of the ingredients and mix. I read somewhere that kelp powder helps to make it more fishy, but I don't have kelp powder so I use nori sheets and wrap it up with tomato, onion and lettuce.
My mom ate some the other night and asked me when I started to eat tuna again. When I told her what it was she was really surprised and then finished eating it.

In my eyes, hummus, avocado, red onion, and alfalfa sprouts will always reign as the king of all sandwiches. Y'know, if gf bread didn't suck. Still good in a lettuce wrap, but I digress...
Simple and sometimes not-so-healthy sandwiches I like:
cheese of choice (a sprinkle of Daiya maybe) with chopped "chicken" nuggets, quesadilla
chopped "chicken" nuggets with lettuce and veganaise + what-have-you, wrap
peanutbutter, banana (+ jelly, ricemellow, etc.)
lettuce and a little margarine, wrapped tight tortilla (snack)
leftover spaghetti panini (or on cold bread with a little margarine)
Nutritional yeast open faced: margarine and yeast spread on toast or plain bread
half a veggie burger with taco fixings in a small tortilla
Tofutti mixed with Italian seasonings topped with cucumbers
for the past few months i have been hooked on shredded carrot and hummus sandwiches for my lunch at work. so simple and so good.
My tuna salad sammich is not measured out but it's:
Mashed up chickpeas
Nutritional Yeast
Garlic Powder
Onion Powder
Sweet pickle juice
Sweet pickles
Vegan Mayo
Bragg's
Seaweed (about 2 sheets nori)
Mix it up and season to taste. If done right, tastes EXACTLY like Tuna salad. Like, I'ma use it mixed with sriracha to make "Spicy Tuna" sushi rolls.
Once I make this again, I'll measure it out.
Doesn't nori get nasty if you don't eat the "tuna" salad quickly... I put rice seasoning in my "tuna" salad (Which is basically salted nori flakes and sesame seeds) and I found it tasted kinda gross within a few days
nope. Just tear it up small. I found it gave a more realistic texture. I am sure u could try using kelp powder or something instead if you dont like the texture of non crispy nori, but in this recipe i think it did fine.
I love a bagel with tofutti cream cheese and veggies.
This sandwich from Follow Your Heart. Probably the best thing i've ever eaten.
Well, it needed a bit of tweaking to get there. Vegan chicken, vegan mozz, tomato and fresh basil on good crusty bread made into a panini. Then dipped in marinara.
Simple as all hell. Not too inventive. But SO. GOOD.
Avocado, olive oil, tomato slices, fresh basil and some salt and pepper. It's wonderful.

mine WAS veganaise, tomato and we can't say it's cheese cheddar. but i ate 3 of them and now they make me wanna barf

LOL... that's what happened to me with daiya... i can't stand the stuff
mine is and always will be garbanzo salad sandwiches... they are so versatile in what minced veggies i can add: carrots, bell peppers, celery, red white and/or green onions... yum! all my coworkers are in love with it and are stoked when i bring them some!
smoked tofu or vegan “chicken” and vegetable korma (in curried egg-free dairy-free mayonnaise) with crispy lettuce. :)>>> :) ;)b ^-^
Tons of nice thickly sliced mushrooms toasted on a hoagie roll with daiya cheddar, vegenaise, onions, peppers, and maybe a tomato if I'm feeling wild. Nothing like a portabella *cheesesteak*. That or vegan reubens.
