Chipotle peppers

This weekend I bought a can of chipotle peppers and I'm addicted!  I have been putting them in everything!  What are your favorite things to put them in?

I love those suckers. I put them in everything too!

My absolute favorite is to roast sweet potatoes, onions, squash, and bell peppers, then toss them a sauce made of fire-roasted tomatoes, garlic, and chipotles.

I have also put them in mashed potatoes, potato salad, refried beans, corn bread, many kinds of random soups, tofu scramble, sandwiches with avocado tomato, onion, and Veganaise...

Or saute/carmelize onions with them. Or add a little of the adobo sauce they come in to hot chocolate. I could go on and on.

My most memorable chipotle experience though, was when I made a soup for a dinner party once and misread the recipe, adding one CAN of chipotle chilies instead of one CANNED chipotle chili. Let's just say it was a hot night....

Never put it on Mashed Potatoes, but that sounds amazing. I put hot sauce in my mashed potatoes, so I assume chipotle mashed potatoes would be amazing.

I love making the chipotle adobo black beans in Veganomicon. Mix it up with vegenaise (to make chipotle mayo) and spread it on any sandwich (another idea from veganomicon).

I used them in a blackbean burger recipe...Id have to look for it if you want it. Let me know.

We also add them to jambalaya and chili. I cant think of what else but we had to buy the can for the black bean burgers but had a lot left over and now my dads just crazy about them! So we keep trying them in different things. They are pretty neat. I guess they are just smoked jalapenos?

I bought a can just in case I needed it. I've been too scared to throw it into a recipe so far though because I'm afraid they're like ridiculosly spicy!

Yes. That's a great idea too!

NewShoes, you should totally try them. They're not so much blatently spicy as they are smoky-spicy. They kind of have an afterburn. Just start with adding a little bit to your favorite dishes, maybe 1/2 of a pepper minced up. Or you can just add the adobo sauce they come in.

Ooh I put them in everything too. When I get the can, I usually blend up the whole thing with a little extra water or vinegar to thin it out, and then use that as a hot sauce. Soups, stews, sauces, salad dressings, etc. etc. etc. If you could conceivably put tomatoes, black pepper, or cayenne in anything, I'll put chipotles in as well.

i'll have to try that recipe, mdvegan! Looks very easy.

You convinced me secondbase! I threw some adobo sauce in with the tofutti in the Sandwich That Got My Brother To Eat Tomatos (http://vegweb.com/index.php?topic=12720.0). Wow!! Good stuff!  ^-^ I highly suggest makin' that sandwich chipolte style.

I'm thinking next time I might step a little further out of the box and throw a whole pepper into some black bean hummus. Mmm :)

Mashed potatoes.  And fill crispy taco shells with the mixture and whatever veggies I feel like adding.  What a wonderful quick meal!
