Bean recipes
I want to slowly go back to a vegan diet, with my son and myself, but I want to make it a slow transition, and I don't want to be overly strict about it, otherwise I won't stick to it.
Right now there are two vegan recipes that I make weekly, but if I can build up my collection of vegan recipes that are REALLY good to say...8, then I think we will be transitioned. Currenly I make black beans and rice, and tofu stirfry almost weekly (tofu stirfry sometimes 2x a week as it is my son's favorite meal!). Problem is I don't have much money, so I want to concentrate on increasing my bean recipe collection. I don't really care for soups, and like hardy filling recipes that are pretty quick to whip up.
I don't like vegan cheese substitues, they are NASTY, I have tried them all, and too expensive anyway, so if you can stay away from then, that wold be great.
But I LOVE love love nutritional yeast. So a cheese sub home-made with NY is great!
Suggestions for good bean recipes that are good and filling that both me and my 1 year old son would like? If you can provide a link, or a recipe that would be helpful.

I just made Ful http://vegweb.com/index.php?topic=5339.0 and am eating it as I type. I serve it over rice, and top with chopped tomato and onion, and today I added some avocado chunks. It's so simple and so good. And so cheap! I do saute some onion and garlic to add flavour to the beans. You will want to leave the raw onion out of the baby's portion, I shouldn't wonder.
Hummus...not just chickpea, but with lentils, or black beans, or red lentils. There are many, many hummus recipes on VW. Personally I don't care for canellini bean hummus but that's just me.

It's worth soaking the beans for literally 24 hrs. Plan the time of day that's best to make them and put them to soak at that time the day before. You can even blend the ground chickpeas with the spices and then put the mix in the fridge, covered, until you have time to fry them. I cheat and use powdered spices.
And don't forget lentils! The Sweet Potato Dahl recipe is out of this world, not to mention Lucid Anne's Lentil Rice Salad.
Two of my usual meals are beans. One is black beans with corn. All I do is use a can of black beans and put them in a pan with a little olive oil, spice them up how i wish (you can make it with lime/cilantro which is good, or garlic/cumin which is what I normally do) Then add in thawed frozen corn towards the end. Its very simple and quick! (I'm actually making this now) You can also add in onions or fresh garlic, I just love the mix of black beans and corn.
The other one is chick pea burgers. Mash up a can or two of chick peas and add in a little olive oil, flour, ground flax, water, and spices until its stick but moldable. Then I pan fry them until they're golden on each side. Very yummy! I'm sure you could bake these if you did not want to fry them.
Sorry I don't have any recipes. I generally don't use recipes. But they're very easy to make!

I used that site to make my christmas loaf. It was really good.
Try the cheezy bean and cheeze enchiladas from this site, but w/ a tomato based enchilada sauce for your little guy.
You can always make burritos, tacos, etc.
Hummus, like Yabbit said is totally kid friendly
Chickpea salad sandwiches or as a spread for crackers-there are a ton of recipes on here. I like to add curry to mine.
I like to cook cannelini beans w/ fake sausage, kale, and a sort of white sauce w/ nutrtional yeast, and serve over pasta or polenta
My husband loves to make baked beans, your son would prob. love those w/ a cut up veggie dog in it
We also like bean salads, black bean and corn, kidney bean and cukes w/ italian dressing, texas caviar(a black eyed pea sort of salsa)
