Veganomicon Recipes

OK, I bought my copy of Veganomicon (cookbook from the same authors as Vegan with a Vengeance and Vegan Cupcakes Take Over the World) last week at Barnes & Noble.  Over the weekend, I made my first recipes from the book.  I made the Chickpea Cutlets with the Mustard Gravy.  I also made the Tomato-Rice Soup with Roasted Garlic and Navy Beans.  For sweets, I made the Chocolate-Chocolate Chip-Walnut Cookies.  Everything was really good.  I've been having a difficult time staying away from the cookies, they're so good (very thin, crispy, chewy!).  Has anyone else here purchased this cookbook yet and made any recipes?   I'd love to hear what people are making and enjoying from this cookbook.  I really enjoy Isa Chandra Moskowitz and Terry Hope Romero's other cookbooks, and I'm looking forward to exploring more in this new book.

I made the chickpea cutlets for the second time, but used pinto beans, and baked them. The pinto beans didn't seem to make much of a difference, but I definitely prefer frying to baking. Mine might have baked too long, but they came out too dry and chewy. Still tasty though. I think they will be good for sandwiches. I made my own dijon mustard gravy..and it was ok.

Lemony roasted potatoes
-Meh. I don't think these are worth the trouble. We prefer regular roasted potatoes. I think I used too much oregano and broth. Oh well. They were aight.

yeah when i made them i added sliced brussell sprouts and i actually liked them better than the potatoes

I remember making the Lemony Roasted Potatoes awhile back. Nothing memorable.

The Lemony Roasted potatoes are a huge hit with my family! I don't really measure things though, & I'm pretty sure I used less broth than it called for & extra seasonings.

I haven't tried the lemony potatoes yet, I was going to. The only potato recipe I tried were the herb-scalloped ones, back in the days, when I first got the book and started experiencing with vegan cuisine. I actually thought it was really good. I think I made them with chickpea cutlets, but I'm not certain.

I haven't made the lemony potatoes either but that's because I generally don't like any savory foods with a lemony or lemon-pepper taste *gag*... am I the only one??!

I have had my cookbook for awhile  now.  I thought I had reviewed some recipes but when looked back realized I hadnt.  My favorite so far is the LEEK AND BEAN CASSOULET, I double the biscuit part and bake half seperately so I can use them with leftovers without them being soggy.
The SNOBBY JOES were all right but a little too saucy. The CHICKPEA CUTLETS were also ok, a little too stringy and floury.BBQ TOFU was pretty good. SPAGHETTI AND BEANBALLS, although not the worst faux meatball also not the best.  MAC DADDY should be called MAC BADDY, thats all I have to say about that! PUMPKIN BAKED ZIT WITH CARAMELIZED ONION, It made ALOT.  after about the 4th day of leftovers........I had had enough (the Cashew Ricotta was very good on its own, thinking of using it as a filling for ravioli) CHOCOLATE-CHOCOLATE CHIP WALNUT COOKIES,

I made the Caesar Salad with Roasted Garlic Croutons tonight.  Ehh.  I was not thrilled with the taste of the dressing at all.  My bf seemed to like it though, which is very weird because it's usually the other way around.

That is where I compiled all the reviews from this thread. I like to repost the link every once and a while on a new page, so that I can easily access it to update the list with new reviews. It's easier to find that way. ..and easier to see all the reviews when they are all together.

Today I made the Chickpeas Romesco and the Saffron Garlic Rice for breakfast.

The Saffron Garlic Rice was really good. I used white Basmati rice, about 10 cloves of garlic because I always double the garlic in things, and it came through beautifully. Its a gorgeous yellow color and the toasted almonds add nice crunch. Very impressive.

I really loved the taste of the Chickpeas Romesco sauce - sweet and spicy and tangy. I used more garlic than called for, onions instead of shallots (all I had) and 2 serranos (next time will do 3). I only used 14 oz. of tomatoes with their juice because that was all I had. However, I think it was plenty saucy - maybe would have been too much with 28 oz can. I might have used more than 2 bell peppers, though, because I just used the rest of the jar I had? Anyway, it was very saucy even after reducing and went PERFECTLY with the rice.

I would definitely make both recipes again.  ;)b

Had you not made the chickpeas Romesco before? There's a short review from you under the recipe about adding more spices next time. Was that supposed to go somewhere else?!

I apparently am losing the part of my mind that doesn't deal with birthdays. Usually when I make a recipe out of a cookbook, I write myself notes in there.....but there were no notes, so I thought I hadn't made/reviewed it before. I seriously don't remember!

Anyway, its good. I will make it again. And now I will remember!

No, no, no! You definitely might not have made it. It's very possible. I know that I sometimes add the reviews to the wrong recipe (not seeing where a certain recipe list ends, etc.). Oh well! You are not losing that brain part, though. That's for sure.

I enjoyed a slice of Lower Fat Banana Bread right out of the oven.

It's hard to believe there is only 1/2 cup sugar and 1/4 cup oil in this moist and flavorful bread. I didn't add nuts or chocolate chips, either. It was a straight-up banana bread with a nicely-browned, crunchy top. The hints of molasses, nutmeg and cinnamon make this banana bread a special recipe.
