Shelloid!

I got your parcel today! I COULD NOT figure out why it was that big and then I opened it and found:

Now, I am very grateful and will be making a Thai green curry tonight, but... 50 to 55 servings? I am terrified. Can the paste be frozen? I may have to wait until I'm at my parents' house, make a big batch of curry then risk freezing the paste 'cause there is no way I'll manage to eat all that by myself!

I know it is rather large!!  However, it was so so so cheap and TBH I always keep my curry pastes for far longer than they tell me I should, and I've not died from it yet!!  Literally my last tub of curry paste (the red kind though not the green) was in my fridge for like 6 months before I finished it.  Actually it may have been more than that, but you get the idea.
You should also use some to make ACs thai inspired soup.
I haven't tried the large tub curry paste (well not the green type) so you'll need to let me know what it's like.  I had the small jar stuff, which is the one I was talking about before.
But like I say the other one was so cheap I couldn't resist!

I'm trying the small one tonight because I only have a tiny fridge. When I do get round to the big one I'll definitely let you know how it is. I may try freezing some as well so that even if it takes me forever to work through the tub and it ends up spoiling, I'll have a back-up. Providing freezing doesn't do it any harm, anyway. Thank you again! I'm just off to start cooking now :)  :)>>>

I'm glad it made it there ok.....I had visions of you opening it up and finding the jar all smashed and curry paste glooping all over!

If you keep it tightly covered in a decently cold fridge, it should last for ages. After all those spices are partly a "preservative" in countries where refrigeration is relatively new. I've had a tub of red curry paste (only about 2 cups) in my fridge for a year and it's still fine.

Good point, Yabbit! Well, the curry I made tonight tasted pretty good despite being basically curry paste, coconut milk, onion, green pepper and chickpeas. I imagine I'm going to get through the first jar at record pace. Mmmm, curry :)

I had an airtight plastic jar of green curry paste in my fridge for, oh, maybe 3-4 months, after using just a spoonful (so there wasn't much air in the tub)... it didn't exactly go off, as in make-you-sick off, but it tasted pretty vile. I guess the fresh herbs were the thing whose flavour didn't keep. If I bought it again, I'd freeze it in an ice-cube tray for single servings. ;)b But it will be a while before I buy it again - it was so gross, I might associate green curry with "ew" for some time. ;D

So what did you think of the first jar?

It's the only time / sort of green curry paste that I have used myself and I needed quite a lot of it to make it tasty enough for me (hence the feeds a whole city tub I bought you!)

And AC - you're RUDE, it is not hilarious it is completely normal, honest!

That's what I MEANT!  :P I like it. However, it does take me like months and months and months to get through that little tiny 4 oz Thai Kitchen jar. You need to have lots of curry parties.

but the little jar I bought (same as I sent catski) has done me one portion of your soup, 2 thai curries and there's now not much left, so the 55 serving one.....actually no, it really is stupid amounts isn't it!
