What do I do with 25 lbs of lemons??!

Sooo, a friend of my mom's just gave us a crapton of lemons from his trees. What do I do with them, besides lemonade?

lemon bars, lemon pieeee, lemon poppyseed muffins,  lemon cupcakes!!!!, do a search on here for lemon zest to find recipes that call for it..lemon sorbet in the lemon shells! ooo. so many possibilities..

I just found out today that you can also dehydrate them. I am actually going to try it myself.

I am in the market for a new food dehydrator, since I have had my ronco for 20+ years and it  is literally taped together. Was looking at the dehydrators at the dryit.com and also the excaliburs.
If anyone has thoughts one way or the other about pros and cons of those,  I would appreciate hearing them. Decisions, decisions!! ::)

You can also squeeze the lemons and freeze the juice for fresh lemon juice whenever you want it. I like that much better than the bottled stuff because that stuff never tastes quite the same, but the fresh/frozen stuff is good.

an easy way to do this is to use ice cube trays and then put the cubes into baggies!! My mom used to do this for her iced tea!

yup, i freeze surplus lemon juice all the time - every recipe out there pretty much seems to call for one lemon this, 1 T lemon juice that... I just got frustrated and froze the juice of 5 lbs of lemons. Take that!

If you're going to do that, though, reserve some of the zest in the freezer too, 'cause it would suck to have to buy a lemon just for the zest and not the juice... It's happened to me  ::)

I buy lemons five pounds at a time, and they never last long. It's one of the few fruits DH actually likes. But I think Mediterranean lemons have more juice and a little less acidity than the American version.

And don't forget to dry the lemon zest! If you have a fireplace, the dried peels make the flames pretty colours.

my parents make limoncello like someone else suggested.  it's awesome and you can just keep it in your freezer.  they usually start it early in the spring or summer and it's ready by the end of summer.  really good to sip on.
