I tend to fly by the seat of my pants when it comes to cooking quite a bit, so when I first went vegan this often times turned disasterious! But now I am having a lot more successes, and tonight was a good one. When I was omni I used to like to make macaroni and cheese with hotdogs and peas, and also I liked to make broccoli, rice, and chedder casserole.
Well I was in the mood for a "cheesy" rice casserole tonight, but was too lazy to cut up some broccoli, and as far as hot dogs and mac n cheese I have had no luck at all so far making vegan mac n cheese and I have tried many differennt recipes with and without vegan cheese and they are all yucky!
with hotdogs (Lightlife vegan dogs), and mixed it with rice and peas and it turned out EXCELLENT! It was just the thing to satisfy that cheese craving I was having tonight.

i made this last night and having the leftovers tonight. it's really good but seems not brothy enough, id maybe add more broth next time or use less noodles and only have it be 2 servings. right now ive got enough broth for 1 serving but enough noodles for 3. btw - i used better than boullion vegan chicken boullion + water for the chicken broth.

I had chana masala (VW recipe) with curried sweet potatoes (just made up) and brown rice. Also made carrot cake cupcakes with buttercream frosting for climbing club, and they were awesome.

Home-made Hot and Sour Soup. 1 cup approx frozen mixed stirfry veggies 2-3 oyster mushrooms, cut in strips 1 red onion, sliced thin 2 cloves garlic, mashed 1 inch ginger, diced I started by sauteeing my veggies and shrooms and the ginger and garlic. Then I added 2 cups broth 2 Tablespoons soy 3 Tablespoons white vinegar Hefty pinch white pepper.
Then in occurred to me to throw in some yam-flour noodles (yeah, I know, but I'm not supposed to eat wheat and they're good!) They took up a lot of the broth so I had to add some more.
