Cauliflower Poppers

Ingredients (use vegan versions):

    1 large head of cauliflower
    juice of 1 lemon
    3 cloves of garlic, minced
    2 teaspoons Dijon mustard
    1 tablespoon olive oil
    1 teaspoon salt
    1 teaspoon dried dill
    fresh black pepper
    2 tablespoons nutritional yeast

Directions:

These are soooo good - sometimes when I want a light dinner I'll just make a batch and eat it all myself, easily as good as French fries!

Preheat the oven to 400, and separate the cauliflower into bite-sized florets.

Whisk together the remaining ingredients and toss with the cauliflower, then bake for 40 minutes, stirring once about halfway through the cooking time.

They're ready when they get nicely browned and they're tender but not mushy -- I like to leave mine in until they get chewy blackened parts, but that's just me. ^^

Makes: 4-5 servings, Preparation time: 10 minutes, Cooking time: 40 minutes

I love browned cauliflower so this recipe really appealed to me.  It didn't disappoint.  They were great dipped  in tofutti sour cream. 

One thing--I didn't bake them the full 40 minutes--more like 35 minutes.  They were a little bit burnt, and my smoke detector started to go off!  So  watch for that...

this was YUMMY. everyone gobbled it up. i made a couple of substitutions: toasted breadcrumbs for the yeast, & i added a tablespoon of vegan italian dressing to some regular mustard because i didn't have dijon. good stuff! thanx! Grin

This was a great and very easy snack.  We added some red pepper flakes for a little added kick.
We substitued regular mustard for the Dijon. 
The husband wasn't expecting much but he's already asking for more.  Thanks, for the great recipe!

This was super!  Much better than I anticipated.  Usually I like my veggies plain with maybe a little salt, but this really took it up a notch!  I omitted the dill because sometimes I think dill can overpower a recipe...  The mustard flavor really came through...  I will make this again  Smiley

These were fantastic & gone in about 2 min at our dinner party....they stuck to my pan so when I tried to stir them at 20 min I ended up breaking them into smaller pieces.  Not a huge deal but I will remember to oil the pan slightly next time Smiley

This is an easy way to spice up cauliflower! It was really good and uses ingredients that I keep on hand; I will be making it often!

i like cauliflower now! i thought cauliflower was a yucky vegetable but i decided to give this recipe a try... glad i did. im not very fond of dill so i omitted it from the recipe. mine came out a bit too sour though, maybe i used a little too much dijon. i baked them for a little less than a half an hour, this allowed them to maintain some of their crunch, which i really enjoyed. i will definitely make this again.

its just as good if you just coat a sheet pan lightly with olive oil - and roast the califlower for about 25 minutes with just salt n pepper ....

these are sooo good.
i made some changes, but nothing too major.
i like to enjoy the whole head of cauliflower for dinner if i make these.

Yum! I didn't change anything..(I didn't measure), but these are great. Our favorite way to have cauliflower, so far. Oh, I did use horseradish mustard instead of dijon.  Smiley
