Scrumptious Corn Chowder

Ingredients (use vegan versions):

    1/2 sweet pepper, finely diced
    1/2 large vidalia or yellow onion
    1 large red potato
    3 cups water
    3 tablespoons nutritional yeast (divided, see below)
    1 tablespoon vegetarian chicken-flavored broth mix
    1 teaspoon salt
    2 teaspoons Mrs. Dash, Spike, or herb blend (optional)
    3 cups frozen (or blanched, fresh) corn kernels
    2 cups oat milk or other non-dairy milk

Directions:

This is one dish that will surely have some of your non-vegetarian friends looking at you with suspicion and asking, “are you sure there’s no cream in this?” It is rich and satisfying, while low in fat and calories.  It is also a properly combined food and perfect for a quick, cozy supper or light lunch.

Sautee the onions and red pepper in a non-stick pan or with a spray of non-stick coating until the onions are translucent.  Add the potatoes and continue to sautee for five more minutes, stirring often to prevent sticking.

Add the water, two tablespoons of the nutritional yeast, the broth mix, salt, and herbs.  Simmer for twenty minutes until the vegetables are completely cooked.

Meanwhile, blend the oat milk, one cup of the corn and the remaining yeast in a blender until absolutely smooth and creamy.

Just before serving, add the other two cups of corn to the broth and vegetables and simmer 4-5 additional minutes until the corn is hot.  Then add the oat/corn cream to the soup and heat through.  Do not boil, as the “cream” will tend to separate if you do.

Serve with a green salad and slices of whole-grain vegan bread for a wonderful, hearty meal on a cold winter day.

Serves: 4-6

Preparation time: 30 minutes


This is absolutely wonderful!  The spices sneak up on you and give the dish a very peppery taste, and I proudly served it to carnivores at work.  It was well received, and I will make sure that I keep it as part of my favorites.  I am new to this sort of cooking (working at being vegan), and I am pleased to find something so full of flavor!  Thank you!

Thank you so much for this recipe.  Its my favorite now.  I've been craving corn chowder like my mom used to make (with milk) and this is wonderful - I added Lightlife Fakin Bacon (crumbled) and it was absolutely wonderful and creamy!

This is a very flavorful and easy to make soup.  It is one of the best non dairy cream soups I have tried.  I added a little ume plum vinegar for fun.  I didn't use fresh corn, but I bet it would have been even better.

scrumdiddly-licious.  i didn't have a pepper, nor mrs. dash.... so i just added a whole bunch of other spices....  sage, thyme, black pepper, white pepper, a tiny-tiny bit of dill, a smidgeon of basil.... and i think that was it..... very spicy indeed... and quite yummy. thank you.

Thanks a bunch for this one! It is so hard to find good recipes for creamy soups.  Thanks to the corn/soymilk puree and the chicken broth, it tastes so real I bet I could fool my meat and dairy-eating pops!  It was really, really good...I'll be making it again soon - so simple and so dang yummy! This soup is delicious alone, but I put some shredded lowfat cheddar cheese (or vegan cheddar cheese for vegans) plus a dollop of non-fat sour cream (or vegan sour cream for vegans) and it was absolutely awesome!!  Try it!

I am omnivorous, but I made this for my vegan aunt on a recent visit and it was a big hit.  I used fresh corn, roasted in the husks in the oven.  I also added crushed red pepper to the onion to add some kick.  Thanks for the great recipe!

This was really good - I bet this would also be good with some rice in place of potatoes. For spices, I used salt, pepper, Italian blend, and curry.

this was the best chowder ive ever had. i used fresh corn. the pepper really adds a nice flavor. I didn't use the nutritional yeast, just the veggies, soymilk, water, and some salt and pepper. ill make this again!

well, you could use it but it might be a little sweet for a soup. i like to drink that stuff and the flavor isn't over-the-top vanilla, so it might add a nice richness to the soup? If you don't have other stuff you could always try whipping up a little batch of rice milk for the soup, the recipies on this site look easy enough and if its a bit chunky that won't be bad in a soup!

YOWSA!!!  That blended corn really gives it a cream feeling in your mouth!  alterations:  I didn't have a red pepper so skipped that, used a white potato cuz I didn't have a red, used 1 tsp. of Lawrys seasoned salt for reg. salt, 1 tsp. reg Mrs. Dash & 1 tsp. poultry seasoning (no there's nothing fowl about it), and plain (non vanilla) soy milk.  This will be made a lot in my house from now on!!!!!  mmmmmmmmmmmmmmmmmm

This corn chowder was good hot that night.  I also ate it cold the next day for lunch as I didn't want to take the time to nuke it.  My wife thought it would be good to make it with cashew milk next time so I'll try that thought.

indeed, this is a  very delicious recipe.  the only changes i made were to use green pepper and a whole onion, 2 tsp powdered stock and 3/4 tsp salt.  i did not use mrs spike (who/what is mrs spike?).  anyway, i didn't miss her!  next time i plan to blend the whole mixture after it is cooked.  excellent, thankyou diana.

ahem...well...i definitely do not recommend blending afterall.  spoiled it completely.  so, stick with diana's method, give or take any minor adaptations, and have yourself a delicious bowl of corn chowder.

i feel sure that canned corn would work, although i imagine that frozen would provide a better flavour and consistency.  in nz, frozen corn kernels are much cheaper than canned.  and nicer too, in my estimation.  good luck!

I made this for dinner tonight and it was YUMMY!.... i used canned corn (worked just fine).  I didnt have a pepper so instead i used some carrots and  celery... just cause i like them in soup.  My soup didnt get very thick so i used a little cornstarch to thicken it up.  I'm sure it'll be even better tomorrow for lunch!

I've been wanting Corn Chowder the last few days & with the storm that came through last night, decided it was soup night Cheesy
This recipe  is really good Smiley I don't have Mrs. Dash or Spike, so I improvised. Added 1diced  carrot, 1 tsp of oregano, almost 3/4 tsp of chili powder, sprinkle of dill, 1 bay leaf & some pepper.
Looking forward to eating the rest tomorrow. Thank you for this one.

just finished making this for my mom and i for dinner and it was delish...left out the spices (but added rosemary thanks to mom) as well as the nutritional yeast (i like it but mom is not a fan) and it still came out GREAT!  just creamy enough without being too heavy.  alongside a green salad, this will become a regular meal for this soup fan:)

This was really good.  Next time I'll add cornstarch to thicken it up, as it did not get thick at all.  It definitely needed more salt.  Still, I'd make it again!

This chowder is delicious!  I used thyme and some fresh pepper instead of Mrs Dash, and added some hijiki, for some "sea" flavor. YUM!!!

This corn chowder was FABULOUS! It was rich and chunky, just the way I like it. I didn't have any nutritional yeast, and could not find it at the grocery store, so I just skipped it and added an extra tablespoon of the broth mix. I went out of the box and added one seeded jalapeno for some heat. This tastes just as good as my favorite coffee shop's corn chowder, and that's really hard to beat! I'll be making this frequently!

  I made a double batch of this chowder last night. Excellent recipe, it was delicious. I think I'll modify it a little next time by using a bit less Mrs. Dash (came out kind of too peppery) and by adding more potato and running some of it through the blender to thicken the broth a bit more. Might be good with some fresh green beans added too. All in all this was easy, economical and delicious. Thanks for posting it!

so f-ing amazing!..... i love eating this cold

i used a red pepper and just a regular potato. i also didn't add any yeast or spike

oh,and i only had about 1/2 a cup of soy milk,so i just watered it down

i don't recommend that you use an intire onion ,it was too much...... see ya
