Please help me use up Ingredient X.

Ahoy folks! I thought I'd start a thread where you can ask for recipes and advice on how to use up an ingredient (e.g. a vegetable, fruit, grain, bean, etc.) of which you have lots and lots and lots; or which is new to you and you don't know where to start with it.
I'll go first. :P I have many, many tasty carrots from the farmers' market which I need to use before they go soft.
Recipes, please.
I know, I know, carrots - simple - should be a no-brainer... but I was not fond of them for a long time, simply because I'd never known anything but raw or steamed carrots with very little flavour. I like to do INTERESTING things with them. They're so adaptable! Gimme your adaptations! :D

OK, weird one here. I have 2 boxes of baby rice cerial in my pantry and my grandson will not eat it. Any ideas?

are they same as rice crispies for rice crispies treats? there are a few recipes on here for them... i made the one that didn't even need vegan marshmallows

If it's just plain ground rice with no sweetening or flavouring, you can use it to bread things. Years ago I used to use it to dredge fish in before frying. It gets really crisp and doesn't absorb oil like wheat flour. Put it in a deep plate or a plastic bag, toss in your veggies or whatever you're breading, and dredge well. I think it would work well for say fried eggplant, maybe it would keep the eggplant from soaking up so much oil!
It's basically cream-of-rice, ground finer, so if you like hot cereal, it's also perfectly acceptable for adults.
awesome challenge sv.. i would go with the above, or use it in small batch soups as a thickener and see how that works. like a tater soup.
yabbit, i had recieved a ton of parsley from a friend's garden, and i bout capers yesterday to try your recipe.... i got caught wayyyyy to up oin canning and was tired when i got home.... this morning i found the capers on the counter and the didn't smell good to me (they never do though) so i tossed them. BUT i can actuallty get them bulk, i only need to buy what you recipe calls for, so i am gonna make it this week! just gotta get through the tomato season... or through all the avalible jars.. whichever ends first.

Capers are usually in vinegar, in jars, are you telling me you have access to FRESH? :o

If they are fresh, add a teaspoon or so of wine vinegar to the recipe to get the sharpness.
oh they are far from fresh, i they are probably poured from jars into the olive bar tubs. this just means that I can get the exact amount that i need and not have to wonder what to do with the rest of them :)

OOOohhh, ok, I get you. They sell them on the street market like that here. You buy a baglet or however many you want. Then you won't need the vinegar.

I cleaned out my freezer and I have six bags of coconut, all sizes. (I'm on this month's birthday committee this month at work, so sweet ideas are welcome.)
Coconut? All southern Indian curries. Coconut Chutney.
Coconut macaroons, coconut pie, ANZAC biscuits (cookies), coconut scones, the luscious coconut bread from this site, coconut-pecan frosting for German chocolate cake, lamingtons...or add to cookies, muffins, muesli, oatmeal, crumbles, pancakes/waffles....

Mix it with fake out marshmallow creme fluff and powdered sugar or something, and then roll it into balls, freeze it, then dip/cover it in melted chocolate, then roll it in chopped up peanuts, then freeze it again.
I can't imagine this being a bad idea.

That sounds gorgeous!!
roast them and throw them in pasta! with lots of garlic and olive oil.
Make a bruschetta, or skewer them with some other veggies and toss them in marinade and grill theml (if it's still warm enough where you are). Use them to top a pizza :)
