I've been a vegetarian for a few months now, and I am trying to slowly transition to Vegan. One thing I am looking for is a great breakfast scramble! I am not a big fan of tofu. Just about every way I try to make it, I don't like the taste. Does anyones know of any other egg alterantice I could do? I'm hesitant to try a tofu scramble and waste it!
some people have suggested using chickpeas in scrambles. i've never tried it, but i believe others have had success with it.
Ooo, that might be interesting! Thank you! :D
do you like tempeh? i love scrambled tempeh! its not really like eggs but its tasty.

I love scrambled chickpeas in a bad way. Mix in veggies/potatoes and you've got a breakfast hash, but turmericky noochy mustardy spinachy garlicky chickpeas in the morning... *swoon*
Seitan scramble is really good. There is a recipe for it on this site.
How about a cauliflower scramble? It would just need to me broken into small pieces and seasoned like a scramble, whichever tastes you prefer! :) It would be yummy with garlic, green onion, red pepper, dill, tumeric, cayenne and a splash of Braggs.
