In need of eggplant recipes

hopefully this is in the right place, not totally sure.
I was at the store earlier, and found the most beautiful looking eggplant, so I bought it (obviously!) Except... I've never found an eggplant recipe that I liked :-D so now I kinda need some help. Can you share your favorite eggplant recipes with me? I'd luff you forevers :)>>>
I really love bacon-y eggplant for sandwiches/salads. There are some recipes out there but I usually just throw together some soy sauce, brown sugar or maple syrup, a splash of browning sauce, and a few drops of liquid hickory smoke then sprinkle some rubbed sage and garlic powder in with that and maybe some water to thin it and put thin slices of eggplant to marinate in that for awhile. I end up baking or frying it with some of the marinade to get the best flavor.

There are so many good eggplant recipes on here! Chopska (Bulgarian Grilled Salad), my Dressed-up Eggplant http://vegweb.com/index.php?topic=11821.0, Caponata, Skillet Eggplant Parmesan, and on and on. Those are just the ones I happened to invent/contribute myself...and there are many more.

ehhh I can't make that because I have only nonvegan mayo in my fridge (husbands), plus veganaise is the worst vegan cross over food I've ever had -.- no offense to anyone lol

I made Isaytomatoes' Salata Soda for lunch today. It was great! Unfortunately the browser I'm using won't let me copy the thing from the toolbar for some reason, and I can 't get on VW today with Google Chrome. Search the recipes for it. I recommend it.

That's the one! Go for it, it keeps well in the fridge and gets better as it stands.
