Making vegan store bought brownies

They take maybe 3 seconds more than a box, but not when you factor in having to go buy the box, etc. Plus, no packaging! They are perfect. I like to make them with a prepared Energ egg, but a prepared flax egg works also. Grease your pan well. Add chocolate chips.

The only way I've made successful box-brownies is by combining the boxed mix with a can (15 oz) of pumpkin (nothing more). They don't taste super pumpkin-y (you can't really tell it's pumpkin, but you can tell there's something extra), and they come out soft and fudgy.

The only mix I have had success with is the Ghiradelli brand's two vegan versions.  Also I rarely measure oil, I just add a touch and oil the pan before moving on. 

Though the soy yogurt trick intrigues me.  I shall try it!

i use soy yogurt for the egg and they are perfect! very dense and chocolaty.

How much soy yogurt per egg? 1/8 cup?

I also like the Ghirardelli kind. Had pretty good luck with it.

AC I made those because of your recommendation and wow!!! The first time I made them I left them in a couple minutes too long, still tasty but the second 2 times I made them, (yes I HAVE made them 3 times in the past few days, I blame it on PMS,) anyways the 2nd 2 times I took them out way before they looked solidified in the middle and they are AWESOME!! I just had another bite for breakfast and even after sitting all night they were great.

SERIOUSLY MAKE THESE!!!!! THEY ARE QUICK AND TASTY!!!!

Which brownie mix do you use? A can of pumpkin and nothing else ... no oil, water or egg replacer?

Saskia, I'm guessing that she doesn't use oil/water/egg replacer. Fruit/squash puree can be used to sub for oil and eggs in many recipes (1:1 for the oil and1/4c:1 egg).

I also just heard that Dr. Pepper works well as an egg sub for chocolate baked goods......?????

I've used it with Ghirardelli and Marie Callendar's (I think) mixes. Just pumpkin + mix.

Not bad! The offspring of a brownie and pumpkin pie but come out something like this. Simple, soft, sweet, smooth texture and fudgey.

I was curious and bought a cheapie box of vegan Duncan Hines brownie mix, mixed it with a 15oz can of pumpkin and stirred in about a half cup of chocolate chips. You do have to bake them a little longer, but they come out dark, slightly crispy on the edges and the top--though not that crinkle brownie kind-- still is moist, not as dry as I thought it would be without any oil. Thanks for this baking tip!
