Anything with tropical fruits, like a fruit salad or a sweet & sour kind of dish with pineapple. If you'll have access to a bbq you could do kebabs with pineapple and veggies of your choice (things like cherry tomatoes, colorful peppers, onion, mushrooms, etc).
