Kale Revolution

ftr, I'm not leading the revolución. I've had kale exactly once. But I want to use kale more. Besides liking it that one time (I sauteed some and also made chips), I haven't bought it since because it's not sold at the stores in which I shop. To motivate me to go to the store where I can buy it (organic, too), what are the best kale recipes around? The ones I posted look promising.
I like the creamy peanut kale, and kale w/ raisins and pine nuts. (both on this site, just too lazy to link them shits up)
for that first recipe you posted - the Asian Style Kale - i do something very similar but instead of using soy sauce - i use Bragg's Amino acid (much less sodium). I also sautee bok choy along with the kale - all at the same time. Once the oil is heated up, i put the bottom parts of the bok choy and the kale leaves (stems and all) in (i use the purple variety kale - i find it's great for this) and a minute or two after - i add the bok choy leaves (i leave them for last because they cook up rather fast).
i also add one block of fermented tofu. in and of itself some might not find it tasty - but when it's mixed with stuff (as in this recipe) it adds a wonderful unique "zing" to the dish.
i usually use about 3 - 5 stems of bok choy and about 3 - 4 full leaves of kale - you'd be surprised how much that makes.
when you're done, you can serve it on a bed of shredded carrots (i buy the carrots pre shredded). The carrots are crunchy but absorb the liquid from the sautee - so it's a wonderful compliment.
You can also add a few slices of avocado to the completed dish to give a nice creamy contrast as well.
theres a soup/stew in vcon that has seitan and kale that i really really loved.. i forgot what its called but i reviewed it.
I actually love kale in salad! I made one that was just kale, English cucumber, fresh pineapple, red bell pepper, wakame seaweed, and sesame seeds - the pineapple and cuc made it juicy and the seaweed made it salty, so it didn't even need a dressing. It was delicious, and everyone who saw me eating it for lunch commented on how beautiful it was.
Have you tried kale chips? I've had trouble duplicating them (sometimes they turn out, sometimes not) but my husband loves them whether they're burnt or bendy.
the one i like is called kale and brown rice with a kick. and like SB, I feel too lazy to look it up. but it is the recipe that started my long love affair with kale.
i like to throw it in soup at the end of cooking. I did that with some miso soup today and it was awesome!
if you make juice or smoothies in your vitamix, its really good in there too with some apple.
apple, kale, water, agave. mmmmmmm
i really love that Zuppa Toscana soup on vegweb... though kale is not the main ingredient it really makes the soup <3

No. I was a tester for her first one and I had to buy lots of ingredients to make things and didn't end up using the rest of what I bought and tossed a lot of things. I was going to test for her new book, but I'd have had to buy so many things that I didn't already have that I couldn't afford to make the recipes. Once I make several things and know the basic ways to handle it, I'll probably just wing it.

I eat kale in salad too. It probably seems weird, but it was way less (bitter) flavor raw and works well as a lettuce, as long as it's not from an older plant (the leaves become spiny).
I just made the potato/kale soup from vcon, and am fixin' to stir fry some later this week... I don't know why it's not a more popular green - to me it tastes less weird than the other ones, and is a pretty good source of all those leafy-green-things.

I'm a bit ashamed to admit I've never tried kale. ::gasp!!:: I don't know why... I love me some leafy greens.
HH, you've inspired me. Next grocery trip I'm going to take the plunge and buy some kale. Looks like I'll have plenty of options for how I want to try it first.

I love kale...I don't have a real "recipe" for it, but if you have HIAV there's a great recipe for Mashed Garlic Potatoes with Kale that is delish. I really like having it just sauteed and tossed with any style asian noodle. It's also great on pizza with a little marinara sauce, vegan mozzarella, and mushrooms. Oh, and the infamous kale chip! How I love kale chips...with garlic. Yumm... :)>>>
Yeah, I make kale pesto the same way you would a basil pesto. Only difference being, if the kale is too bitter sometimes I blanch it to get some of the bitterness out. Otherwise I throw it in the food processor with some olive oil (sometimes also some veg broth), garlic, salt and pepper, parm cheese substitute, and your nut/seed of choice (I've had good results with pine nuts, wanuts, almonds, and sunflower seeds).

I made Smothered Mushrooms and Kale. It was okay. I liked all the flavors, but it was awkward to get both sauteed kale and mushrooms on the fork. It was worth the effort to make again for myself, but I wouldn't make it for company or a potluck.
