Hey guys,
I love dishes that feature beans as their main ingredient... and I love international cuisine as well, so nothing is outside my comfort zone (other than spicy Indian dishes).
I would love for you to share with me your favourite bean-centric recipes.. chickpeas, black beans, lentils, whatever.. as long as it is your favourite yummy recipe. :)
Thanks!
Calico Bean Casserole (veganized from Allrecipes)
preheat oven to 350
2 cans of beans..I like black beans and navy beans
1 can of baked beans in tomato sauce
1/2 cup ketchup
2 tsps white vinegar
1/4-1/3 cup brown sugar
1 lb of veg ground beef
1/4-1/2 cup veggie bacon bits or veg bacon of your choice
1/2 cup finely chopped onion
I add l - 2 tbsps of blackstrap molasses and sometimes a dash or two of liquid smoke
fry onions for a bit then add veg beef, veg bacon and brown it. In a large mixing bowl combine beans (with liquid from the navy beans) with rest of ingredients. Mix in the fried burger. Pour into a 9 by 13 baking dish and bake for 30 to 40 minutes. I cover with foil.
This makes lots for leftovers. I love it served on baked potatoes
Veggie Cassoulet
2 cans cannelini beans, rinsed and drained but reserve 1/2 cup bean liquid
2 zuchinni, chopped
2-3 carrots, chopped
3 ribs celery, chopped
1 onion, chopped
1 can diced tomatoes
4 cloves of garlic, sliced or chopped
2 bay leaves
salt and pepper to taste
Oil of choice for sauteing
Heat oven to 400˚. Heat oil in a large skillet over medium heat. Cook zucchini, celery, onion, salt and pepper until soft, about 8 minutes. Mix in garlic and cook, stirring, another minute. Combine veggies, tomatoes, beans, 1/2 cup of the bean liquid and bay leaves in a 2-quart baking dish. Bake until golden, about 30 minutes. Remove bay leaves. Serve with warm crusty french bread!
I got this recipe from self.com but modified it a bit to suit my tastes. It is wonderful on a chilly autumn or winter night!
chickpea salad sandwiches, falafel, my taco soup recipe on here has a couple cans in it, hummus, homemade refried beans, vw's cheesy bean and cheese enchiladas... ya sorry pretty boring LOL
Remember you can make hummus out of any legume you wanna. I am going to try split-pea hummus even though something tells me it's not gonna be a hit.
Katti's Black Bean Burgers from here.
Falafel, of course.

Anything with lentils in it. Of course I love the Traditional Spanish Lentils, with or without rice.

Chana Masala, on VegWeb. I think I make it about once a week. It's so quick, simple, yet tasty and satisfying. LOVE it.
How could I forget Heliamphora's African Beans? So creamy and delicious!! http://vegweb.com/index.php?topic=27319.0
And the Delicious Pakistani Dal...you can spice or not, as you choose. I like it with some spinach cooked in but it's good solo, too.
There are so many good bean recipes on VW you could eat beans every day 3 times a day and never have to repeat a recipe!!
Nothing very orriginal but i love split pea, veggie and lentil (i use faux beef broth and tarragon as the seaoning), and chickpea or kidney bean caccitore I add bell peppers, carrots, celery, and mushrooms to the typical stuff to beef it up then serve over brown rice or quinoa.
I particularly like black bean burritos, or sometimes I even make some homemade refried beans. Also, I thoroughly enjoy the Indian dish, Chole. It's chickpeas simmered with onions, tomato sauce and garam masala (You can control the heat level).
Also, any middle eastern inspired lentils dish.
Oh, and a Mediterranean bean salad - http://allrecipes.com//Recipe/mediterranean-bean-salad/Detail.aspx Amazing.
The Black-Eyed Pea Dip from The Indian Vegan Kitchen rocks!
i'm trying to get my protein from beans and legumes, and trying to stop depending on tofu and gardein. i have been making a spanish style beans and rice, (brown rice, cumin, onions, corn, black beans, salt papper), and i have been throwing beans in my salad, especially pinto beans. the recipes listed here sound so yummy :)
