The best vegan mac and cheese

So, I just made "The best vegan mac and cheese in the entire world...seriously." http://vegweb.com/index.php?topic=8295
I'm a little wary to try something named "the best ever," but this got so many great reviews I gave it a shot. It's the only vegan mac and cheese I've ever had, so I don't have a comparison ;) but it was pretty freaking good!
I think I will introduce it to my omni friends as "Pasta with a creamy sauce" instead of vegan mac and cheese...you know? I could see them enjoying it that way, but if they tasted it with the expectation of cheese...eh, I don't know.
I'm really way too excited about this. ;D
LOL! Nothing wrong with being super excited about something! I myself have yet to try it.. since the recipe has yielded rave reviews, perhaps it's about time I give it a try...

Have you tried dragonfly's bulk uncheese sauce yet? It's so yummy and a great vegan staple to keep on hand. so yummy and so easy.

Ive made that a couple times but added veggies & just called it a veggie noodle casserole. Its pretty good that way, but I still think the nutritional yeast is too overpowering. I'm not a big fan of the yeast

:D haha...when I read this I squawked like one of my chickens cause i got so excited..(I realize thats not a normal...maybe not even healthy...reaction to humor- but thats just what I do. ;D good idea though!
It really is ridiculously good. My wife runs an at-home veggie daycare, and she feeds this to the girls fairly often under the moniker "Mac-n-Yum". Never a complaint from those omni kiddies... :)

It says to bake it - I didn't, I just added the sauce to the cooked pasta, and it was amazing. This is the closest I've tasted yet to the old Velveeta kind.
I also noticed that both this and my favorite lasagna recipe - http://vegweb.com/index.php?topic=20405.0 - use tahini and miso as part of the sauce that's pretending to be cheese. I'm wondering if those are the secret ingredients to any sort of cheese-like dish...
^ i am so glad you posted that! ive been planning on making homemade macaroni and cheese tomorrow, but unsure of which recipe to try. any other suggestions would be appreciated!

1 cup of oil? Ugh.
well, it is for 1 and a half pounds of pasta.. the vegan yumyum one only uses 1/3 of a cup, but then also only uses 3 cups of dry pasta so it's probably about the same.

I've been wanting to make this for a long while, so I finally splurged and bought some miso! I made one mistake, and added too much tahini...but other than that, it was grand. I think I just need to tweak it a bit for our tastes, but I think it's the best mac and cheeze I've made.
that looks delicious allychristine!!! the reason i have never made susan's recipe is because i also dont have miso (or tahini!) but now with the holidays approaching, i will need it for gravy. so i think miso is on my shopping list.
I do like this recipe but I need to add raw scallions to break up the monotony of flavor personally. It's also much better the next day after being chilled than when it's hot from the oven. It's very filling!
I tried the VYY recipe too. You looks nicer than mine, AC. 'Fraid to say I found the sauce too rich for my tastes. Maybe next time miso OR tahini, but not both?
I am seriously in love with cashew-based mac and cheeze. Lately I've been pureeing the cashews completely first, which makes for a delectably creamy sauce. I no longer have a coffee (/nut/spice) grinder, but I found the pre-grinding unnecessary when you're gonna blend the heck out of them with some soy milk anyway.
Another trick I discovered to make a sauce extra cheezy/yeasty is to sautee the nooch in the oil first, over medium heat until it smells nice, then throw in your liquid and other ingredients. Be warned: it's way easy to burn the nooch, but if you're careful, you get a wonderful toasty flavour. :)>>>

It was extremely filling. Like unbelievably filling (partially b/c of the richness, maybe). We were like ughhh full after one bowl.

I've tried making nooch sauces, but just haven't had tasty success. It never tastes right... What's the trick?
AC that picture just looks stupendous! Looks like this is the winner for tomorrow's potluck at work! I'm going to be super sneaky and not tell anyone it's *gasp* vegan!
AC, your photo looks soooo good- very shells & cheesey. It looks better than the ones on the VYY site! Besides less tahini, how do you think you will tweak it when you make it next time?
