The official Spork Fed cookbook review thread (to be updated).

Good.  I loved the wing sauce and enjoyed that a lot.  My seitan came out overdone on the edge and crunched...not burned but dried out and I didn't like that and it really makes it a fail for me.  I hoping letting it sit in the fried for a while takes away some of that texture. (tweety)

Coconut and lime seitan skewers

Nachos with melty cashew cheese, lemon herb sour cream, and guacamole (gf)
Deeeeeeeeeeeelicious! Love, loved them. This is one of my favorite cheeses! It's not too noochy, not too anything..it just tastes great. I did make it a few minutes ahead of time, and just left it in the processor, then melted/reheated on the stove. I had to add water this way, and probably would have preferred it fresh. I added some of my favorite chili blend. I used black beans instead of pinto, and lime instead of lemon. I usually do garlic instead of onion in guac, but did onion this time, and added some tomato. Loved these nachos! (AC)

Spanakopita with homemade tofu feta

Beer battered tempeh fish with a tartar sauce

Caribbean salad with crispy plantains and avocado mango salsa in a light lemon vinaigrette (gf)

Amazing Caesar salad with homemade croutons

Velvety carrot soup with mint oil (gf)

French onion soup with a cheesy crouton topping

Green salad with creamy tempeh bacon ranch dressing

Chilled creamy red and yellow gazpacho

Southwest chopped salad with grilled corn and tortilla strips in a creamy basil dressing

Nicoise salad

Creamy tomato soup
This is a good soup! It's not rich like a bisque, and it doesn't have basil, but it's more like a good version of a canned tomato soup. Everything is well balanced. Enjoyed it. (AC)
Jerk coleslaw with plantain strips (gf)

Sides
Spicy corn fritters with lemongrass (gf)

Patatas bravas (spiced baby potatoes) (gf)

Creamed onions with a whole wheat bread crumb topping

Green bean casserole with spelt bread crumbs and frizzled shallots

Crispy brown rice cakes with adzuki beans and scallions

Quinoa salad with fennel and white beans in a light lemon vinaigrette (gf)

Miso glazed Japanese eggplant

Grilled asparagus with an herb pine nut sauce (gf)

Mashed potatoes with caramelized onions and crispy sage (gf)

Fried green tomatoes

Green apple and cashew sourdough stuffing

Twice baked potatoes with broccoli and cheese filling (gf)

Broccolini in a pecan brown butter brandy sauce (gf)

Scallion pancakes with a sweet and sour dipping sauce

--I only made the pancakes, but they were good! They were different from the take out ones I'm used to, since they're not as greasy and the whole wheat flour gives them a heartier texture (used regular whole wheat instead of whole wheat pastry flour). I like the addition of black pepper...seems to work well with the scallions. I'll probably make these on a regular basis now that I know how easy they are to make at home! (kristinv)

Southwest black bean and corn mini burgers with a smoky paprika cashew cheese

Main dishes

DIY homemade tofu (and homemade soymilk) (gf)

DIY homemade chicken style seitan
First reaction is "meh" nothing special about this compared to other seitans.  I'll reserve final judgement until I actually use it in something.  (tweety)

Mushroom bourguignon
This was pretty yummy and filling on a cold snowy day.  It was a little too sweet for my taste, but I won't object if hubby decides to make this for me again. (katequeenofsprouts)

Seitan wellington with a creamy spinach sauce

Potato gnocchi with basil in a roasted shallot cream sauce
the lemon in these was interesting (and good), and the sauce was also tasty, but it thickens up a lot. My husband likes gnocchi and said the texture was great. I've learned gnocchi just isn't my thing. (tamasin)

Vietnamese crepe with a mushroom bean sprout filling and a spicy tamari dipping sauce (gf)

Cashew cream fettuccine alfredo with sauteed spinach and cheese crisps (gf)

Personal seitan pot pies with an herb biscuit topping

Tempeh sausages with a mushroom gravy

Frosted tempeh loaf
I liked it, even though it was more like frosted tempeh whip (very soft, not firm). My husband did not like it at all, which is unusual, since he does not frequently have strong negative opinions about food in general. (katequeenofsprouts)

Roasted butternut squash and sage lasagna with a creamy bechamel sauce

Creamy pistachio pesto over brown rice (gf)

Cornmeal and herb crusted tofu feta croquettes (gf)

--These were very pretty to look at, and the outside of them was nice and crunchy and tasty.  However, the inside was too much like raw tofu for my liking. (katequeenofsprouts)

--These were delicious! I'll be making these again, probably in regular rotation. They were very easy to mix up and they stayed together while they fried up except for a couple that I flipped over with reckless abandon. They were crispy and golden on the outside and soft and flavorful on the inside. I sprinkles a little Daiya mozzarella on them and might even mix some right into the recipe next time. This is a great recipe to do different herbs and other add-ins. (aggplanta)

South Carolina barbecue tofu sandwich

Barbecue style spelt pizza with caramelized onions and tempeh bacon

Seitan scallopini with sauteed mushrooms in a red wine sauce

Creamy baked macaroni and cheese with a spelt bread crumb topping

Ginger, maple, and mustard glazed tempeh (gf)
Pretty good.  A++ for being unique as I've never had anything like this.  It's a bit heavy and rich with the tempeh, maple syrup and lots of olive oil but good. (tweety)

Desserts

Apple and pear tarte tatin

Apple pie milkshake

Grandma's bird's nest cookies rolled in pistachios

Chocolate peanut butter mousse with a crunchy topping (gf optional)

Crunchy peanut butter bonbons

Strawberry shortcakes with a coconut whipped cream topping

Cinnamon scented tiramisu

I received this as a gift from our work gift exchange!
Just upon looking through it, there are some things I like/don't like. I like that there's not a huge intro with all the same stuff (not that I have a problem with this, but when you read a lot of cookbooks, it gets old!), there are quite a few nice pictures for the recipes, and the recipes look nice and varied. However, it is a bit cutesy for me with those little abbreviations and such, the recipe titles are froufrou (why did they have to put "a" and "with a" for every sauce?!), and the longer recipes go on to the next page with these huge gaps of space!

We'll see how the food turns out! A lot of it looks very tasty.

Book looks great. I definitely want to get my hands on a copy of this. The photo of the strawberry cream cheese stuffed french toast looks killer.

Beer Battered Tempeh - indulgent and delicious! We absolutely loved these. The book says crisp on the outside and creamy inside, which is right on. I won't make these often because it's just too easy to eat way too many.

There are  a lot of recipes in this book that I'm looking forward to trying.

Homemade "chicken-style" seitan - First reaction is "meh" nothing special about this compared to other seitans.  I'll reserve final judgement until I actually use it in something.

I find myself forcing myself to use this book since I hate spending money on a book that just sits there.  Not sure why it doesn't appeal to me.

Nom Nom. Great ideas really worth trying. I am still trying to find relatively simple and cheap vegan meals to make. I will try and check the Spork Fed cookbook hopefully they will have some interesting ideas. Sharon. website design and development Melbourne
