I'm taking over the world with VEGAN CUPCAKES!!

I just picked up my copy of Vegan Cupcakes Take Over the World! I'm so excited... what should I try first?

We LOVE the cookies and cream ones!  the mocha ones were also very good and the vanilla were good too but cookies and cream is our absolute favorite (so far).  We have many on our list to try but we seem to alternate - new one, cookies and cream, new one, cookies and creem, LOL!  I'm not sure which part we like better, the chocolate cupcake or the frosting!

Thank you.  The only ones I've made so far were the vanilla ones and the orange ones with the pudding and chocolate ganache which were fabulous but with too much of a grown up taste to appeal to my children.  I think I will go with the c and c since so many vegwebbers can't be wrong.

Another question:  do you usually add the cookies to the cupcake part or just do the icing?  I know the recipe calls for chopping up some cookies and adding them to the batter but I am wondering if the cupcakes come out too sweet.

^ No, definitely add to both the batter & the frosting! The cookies in the actual batter give the cupcakes a great texture. I wouldn't skip it.

Just some tips for the cookies & cream: I actually prefer them using the vanilla cupcake recipe & adding cookies to that to adding cookies to the chocolate cupcakes. Also, If you are piping the frosting, make sure to really finely crush up the cookies you put in the frosting or else they will clog your frosting tip.

Second base you can make your own vegan chocolate covered espresso/coffee beans...just buy as many as you think you'll need of your favorite beans and dip them in melted vegan chocolate..yay..cheaper too. It is what did for the tira misu cupcakes. ;)b

How did you make such beautiful cupcakes? Do you, or anyone know, what type of frosting tip to use to get them like this?

I know little about frosting tips and have always used your basic butter knife to frost cupcakes.

saskia, i'm pretty sure it's the large star tip (can't recall the number..).
there's a wilton decorating kit thing with three or four tips (including the large star one), a few piping bags, and a little booklet with tips and stuff. it's like 12 dollars i think. definitely pick it up (walmart/target should have it, or craft stores will for sure have it) or put it on your christmas list  ;)b

Which cupcakes in the book would you make for kids?

I haven't made the cookies and cream ones and I am wondering if there are really that good????

I made some once at a birthday party and for a housewarming party. They were very successful. The people there weren't kids, but they loved it!

I made tonight the Pumpkin and chocolate chips one.  I mixed black and white chocolate chips. I didn't change anything with the portions in the recipe, and put one cup of sugar and 1/3 C of oil, like it said. Very chocolatey and it didn't taste very much like pumpkin. It was very sweet.  My new roomate and her new "boy friend" loved her.  I thought they were good, but I haven't made the cinnamon frosting, yet, but don't really feel like making it because the cupcake is already very sweet, I think.

Last night I took Crimson velveteen cupcakes with buttercream frosting to a party and of course, everyone loved them!  My ex-boyfriend's new(ish) girlfriend exclaimed that they were the best cupcakes she's ever had.  I swear someone says that everytime I take vctotw anywhere.  Awesome.   ;)b

How did I ever put this book down?  I went crazy with cupcakes after I got it, but since I was the only one eating them, I had to put it on a shelf and forget about it for the sake of my waistline.

I took the Lemon Macadamia with Lemon Buttercream and the PB with Ganache to an omni potluck last winter and they were gobbled up.  Unfortunately, there were so many other desserts that quite a few ended up coming home with me.  Too bad I had to eat them all myself  ;).

The Lemon Mac ones were so good I can only describe them as orgasmic.  Yum.  Also love the PB ones, but the lemon ones rule.

Since only a couple of posts mentioned the gluten-free ones, I thought I'd jump in here and add that I made the Chocolate Gluten Freedom cakes last weekend for a friend of mine.  I had to sub out almond flour instead of quinoa flour, but everything else was the same.  I only ended up with nine (but that could have something to do with me eating the batter with a spoon).  I didn't have time for a buttercream frosting, so I dusted them with powdered turbinado sugar and added a swirl of orange icing left-over from sugar cookies.  I have no idea if she liked them since I just handed them off to her, but my husband ate two and I ate one before I could rescue the six remaining ones for her.  Neither of us are gluten-intolerant, but seriously, you would never know they were gluten-free.  Yummy.

Okay, it appears this thread is dead, but I'm experimenting with my camera so I'm going to post a pic anyway. 

After the Chocolate Gluten Freedom cupcakes last weekend, I decided to make the Banana Split ones with strawberry jam for a another friend who is lactose intolerant.  I think I could sum up the whole experience as a two-day series of catastophies.  It was all my fault, of course, but still a horrible mess.  To begin with, I swirled the jam/chocolate a couple of times as per Isa's instructions, but that apparently isn't sufficient.  Sinking would be an understatement.  They completely collapsed after taking them out of the oven, leaving me with a dozen donut-shaped cupcakes.  I cooled them overnight and decided to fill the collapsed cavities with frosting the next morning before taking them to my friend.

Since my beaters died months ago, I tried whipping the frosting with my immersion blender.  When I couldn't get it light and fluffy enough, I decided to put it in my Vitamix.  Needless to say, I blended too long and I ended up with frosting soup.  I plopped the whole container in the freezer and took it out about every half hour to blend again.  I finally gave up and stuck it in the fridge and went to see my friend with only lemon sugar cookies.

I ended up blending the frosting again later in short spurts until it was smooth and thick (but definitely not fluffy).  Then piped it on and topped with ganache and walnuts.  No cherries, though, since I hate marachinos and no sprinkles since every freaking brand has cornstarch in them (hubby has a corn allergy).

So now since I was planning to take them to my friend but it's too late, we are stuck eating them all.  Not that they aren't good, but they are so sweet I almost can't handle it (which is really saying something).  I ended up having a bit of leftover frosting, but I'm thinking if it would have been fluffier, I would have ended up using less to get the same big mounded effect.  Oh well, live and learn (and always have the proper kitchen equipment).

I have been making many cupcakes since buying myself this book a few months ago. I can't seem to find my right now, but I can tell you I've tried many and they were generally very successful. The first ones that I tried were the Margarita cupcakes and it wasn't bad, but it wasn't pretty either. Probably wasn't the best choice for a first time baker such I was at that time. However, I can tell you that the chocolate-peanut butter, chocolate oreo, chai tea cupcakes, chocolate mint and crimson velveteen were very popular. Some people had problem believe that I made them from scratch. I told, I have the recipe, I have the ingredients, what's the big deal? :D

I really like this recipe book.

My mom sent me this for Christmas..so I now have a second copy (willwolf sent me my first  :)>>>). I'm happy to be able to re-gift it at some point.  ;)b My mom said she was very impressed with it, and just had to get it. I told her I should send it back to her so she could use it! She said she could just make "the regular ones" (i.e. not vegan).  ::)

I got this for christmas and am excited to try some recipes. I know its been said before, but what are your favorite ones? My daughter keeps asking to make cupcakes, and I can't choose. I guess I should see what ingredients I have.

My favorite ones I made were orange pudding or something. But that was my own taste, because most people preferred the oreos and peanut butter and chocolate ones.

PS - Still can't find my book ever since the party at my place. Did somebody stole it to make their own vegan cupcakes? :-\ :o

Ah, those are the ones I wanted to make, but my husband thought they sounded gross. I'll make them next. I'm going to make the pumpkin chocolate chip ones tomorrow. I'm afraid they won't rise, looking at the ingredients.

The Pumpkin Chocolate Chip definitely rise! They're one of my favorites from the book, and have been a hit with others. Sooo yummy! The only cupcakes I have had troubles with in terms of rising are the Mucho Margarita & the Brooklyn Brownie... I know others have had success with those, but they were disasters for me.

The chocolate peanut ones do rise. Actually, like JessaCita, the only ones who didn't were the mucho margarita. Maybe they're not supposed to?
