loved this recipe! I had a whole bunch of apples that needed to be used up and this was perfect. I added raisins to the apple mixture and walnuts to the topping.
these are really easy to make. I halved the recipe and ate them for dinner- really filling and flavorful, great with a bowl of marinara sauce for dipping! :)

these are interesting cookies, more shortbread-y than I was anticipating, maybe because I used a cup of soy butter, not oil? and I didn't add the whole 1/4 of water, but most of it.
