Super Easy Vegan Chili Chocolate Cookies
1 cup olive oil (or vegan butter)
1/2 cup granulated sugar
2 teaspoons vanilla extract
2 cup all purpose flour
1/4 teaspoon baking powder
1 cup chunked vegan chocolate (or more if desired)
1/4 cup water
1 to 2 teaspoons cayenne pepper
1/2 cup pecan halves
Preheat oven to 300 degrees F.
Mix oil and sugar in bowl until thoroughly whipped.
Add vanilla extra, mix again.
Add flour, baking powder, stir until dry and thick and difficult to mix.
Begin adding water slowly, mix it in until your mixture is of a more soft consistency, and less like shortbread.
Add cayenne pepper, fold in.
Add chocolate, pecan halves, mix.
Place in 1.5 inch balls and mash down until about .5 of an inch thick. Make sure they're about 2 inches apart as they'll spread.
Place in oven and bake for 45 minutes (check at 35 minutes, ovens differ).

these are interesting cookies, more shortbread-y than I was anticipating, maybe because I used a cup of soy butter, not oil? and I didn't add the whole 1/4 of water, but most of it. I followed the recipe pretty much, used chopped walnuts because I didn't have pecans, and a teaspoon of cayenne pepper...I was a little afraid to use more than that, hah. I wasn't entirely sure what to expect but I'm fairly pleased with them- shortbread cookies with chocolate chunks and a kick. oh, and they didn't spread much either, and I got twenty cookies out of the recipe.
