Best Oat Cookies that Ever Existed

What you need: 

1 cup brown sugar
1/2 cup white sugar
1/4 cup plus 1 teaspoon oil
3 tablespoons water
1 banana, mashed
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons cinnamon
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 1/4 cups oats

What you do: 

1. Preheat oven to 350 degrees F. Mix the vegan sugars, oil, and water. Add the banana and vanilla. Separately, mix flour, baking soda, cinnamon, and salt.
2. Mix flour mixture and wet mixture. Stir in the oats. If it is too thin, let stand a bit so the oats can absorb the excess liquid. If too thick, add more water.
3. Drop them by tablespoon onto cookie sheet, and bake for 13 minutes. To check if they are done, flip one over and it should be browned. Check inside doneness.

I used applesauce instead of banana and I think it did the trick. However this cookies are quite moist and cake-y. I prefer more crunch in cookies. But I'm from New Zealand where we eat biscuits rather than cookies, so I don't actually know what cookies are supposed to be like. Maybe more of the dry ingredients and less of the wet would make this more biscuit-y and not so spongy. I used wholegrain oats which are pretty tough, so I let them sit in the mixture for 40 minutes. I don't recommend using wholegrain oats unless you have tough teeth and enjoy a good jaw workout.

These were EXTREMELY good. I made these last night, after a week's worth of oatmeal cookie cravings, and it without a doubt hit the spot! Me and my omni family ate most of the dough, which was tasty, and even my Dad (who swears off anything vegan) ate 4 cookies in one sitting!  :D I made half with rasins, half with chocolate chips, and used a ton of cinniamon. Oh, I also used whole-wheat flour.  :) I am making these again! It's the perfect cookie to go with almond chocolate milk and a good book.  ;)

these are v. yummy :) i got a little carried away and added cloves,ginger,&nutmeg...then raided the fridge and added coconut, peanut butter, and chocolate chips! also subbed soymilk for the water...

Yes, I sub applesauce for oil alot and it usually works well.

amazing and so tasty.  added cranberries and reduced amts of sugar. dough was pretty sticky but the cookies were so moist.  thanks!

This is the second time I made this and I only used 1/2 cup of each sugar and used 1/2 cup applesauce instead of the banana.  I used a melon baller to drop them and baked them about 6-7 minutes and they turned out perfect!  They even raised this time.  I actually like them with less sugar.  They are still plenty sweet but not too much.  Thanks for the great recipe!  I will be makeing these for a costume party we're going to with lots on non-vegans!!

I just made these cookies and they taste pretty good but how could they not w/ so much sugar!  However mine were totally flat.  I followed the recipe exactly.  My kids gave them a thumbs up so I will be trying these again!

Wow - These are much better than I expected!  I don't usually have high hopes for cookies with bananas in them because they always end up tasting WAY too banana-ish for me, but it really works in this recipe.  I skipped the nuts and made plain oat/banana cookies.  If I make them again I'll probably reduce the sugars a little because the banana adds a ton of sweetness.  Satan sure knows how to make nummy cookies.
