Best Oat Cookies that Ever Existed

What you need: 

1 cup brown sugar
1/2 cup white sugar
1/4 cup plus 1 teaspoon oil
3 tablespoons water
1 banana, mashed
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons cinnamon
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 1/4 cups oats

What you do: 

1. Preheat oven to 350 degrees F. Mix the vegan sugars, oil, and water. Add the banana and vanilla. Separately, mix flour, baking soda, cinnamon, and salt.
2. Mix flour mixture and wet mixture. Stir in the oats. If it is too thin, let stand a bit so the oats can absorb the excess liquid. If too thick, add more water.
3. Drop them by tablespoon onto cookie sheet, and bake for 13 minutes. To check if they are done, flip one over and it should be browned. Check inside doneness.

SO HOW'D IT GO?

I added shredded and dried coconut and raisins and I used coconut oil. I also used only 1 cup of sugar, wayy sweet enough! Delish! Thanks  :)>>>

These were really good! I added sunflower seeds, raisins, chocolate chips, and replaced the vanilla extract with coconut extract! I got 24 cookies.

these cookies are my favorite and have now become my ''go to'' recipe. yesterday i made them with chocolate chips, but tonight i added butterscotch chips (store brand, which i was very excited about) they are so amazing, they taste just like oatmeal scotchies! now that i have made them quite a few times i have made my own substituions which i find to work really well if anyone is interested.
-- 1/4 cup applesauce for the banana
-- 1/2 cup brown sugar, 1/2 cup unrefined
-- 2 tbsp canola oil
-- 4 tbsp water
-- only 2 cups oats (ive been using rolled, but i think i might switch to quick)
-- 1/2 cup extra add-in

really, these cookies are so versatile and are always gone within 24 hours.

These are delicious! I used 1/4 cup apple sauce instead of a banana because I ran out, but they were so good!

I modified this recipe using what I had on hand:  1/4 cup raw sugar (I don't like very sweet cookies), applesauce instead of oil, two cups of oatmeal, 1/4 cup milled flaxseed, and half a cup of raisins.  Leaving out the oil made the batter very dry, so I added 3/4 cup of milk and about half a cup of water.  I tasted the batter, and wow.  These are going to be some good cookies!  Thanks for the inspiration.

these cookies definitely live up to its name! oh my gosh, they are incredible! i followed the recipe exactly, although subbing the banana for unsweetened applesauce and replaced the white sugar with (grinded) sugar in the raw. oh and i added chocolate chips, which are a must! i aldo prefer to make the cookies larger. i ended up with about 16 med-large sized cookies.

as for the texture, mine were very soft and moist in the middle,perfectly crunchy on the outside/bottom (maybe this was due to the raw sugar?) they also tend to fall appart easily so try to wait a bit for them to cool on the cookie sheet. either way, they were perfect and just the way i like my oatmeal cookies to taste like. also the cinnamon flavor was delicious and even though it does call for quite a bit of sugar, i enjoyed the sweetness. for those who do not like their cookies overly sweet, i would reduce the amount by a bit fyi. 

and no one even had a clue they were vegan. (first time with vegan baking success!) and now this  recipe has finally won over my families tradtional toll house cookies that are always requested. thank you for the recipe!

just a question though,
did anyone have trouble with the cookies sticking to their cookie sheet? i had the hardest time scrapping them off even though i only baked them for 10 minutes (which was perfect)

I've made these several times with a few variations and I love them.  1 1/2 cups of sugar seems like a lot...I always use just 1 cup.  I just made a batch using mashed pumpkin instead of the banana (probably 3/4 cup?) and I added raisins to half of it and it's probably my favorite so far.  But I'm in a pumpkin phase lately. :)
Btw, subbing applesauce for the oil works well but they won't flatten when you bake them.  Try half oil, half applesauce, or just flatten them with a spoon before baking.

These were very yummy for me, nice and chewy, and crispy on the outside. I added a cup of chocolate chips, and only used one cup brown sugar. I also used a 1/4 cup oil and a 1/4 cup applesauce. So very good and so easy!  ;)

I LOVE these cookies!  Anyone (Vegan and Non-Vegan) who has tried them has become obsessed with them!  My family always looks forward to when I come home to make this treat for them.  Thank you so much for this recipe!!!! ;D

These absolutely are the best  oat cookies that ever existed. I made a batch of these for a slumber party with some of my friends and they all still rave about them.
They call them the "safe" cookies.  8)
