Best Oat Cookies that Ever Existed

What you need: 

1 cup brown sugar
1/2 cup white sugar
1/4 cup plus 1 teaspoon oil
3 tablespoons water
1 banana, mashed
1 1/2 teaspoons vanilla extract
1 1/2 teaspoons cinnamon
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 1/4 cups oats

What you do: 

1. Preheat oven to 350 degrees F. Mix the vegan sugars, oil, and water. Add the banana and vanilla. Separately, mix flour, baking soda, cinnamon, and salt.
2. Mix flour mixture and wet mixture. Stir in the oats. If it is too thin, let stand a bit so the oats can absorb the excess liquid. If too thick, add more water.
3. Drop them by tablespoon onto cookie sheet, and bake for 13 minutes. To check if they are done, flip one over and it should be browned. Check inside doneness.

SO HOW'D IT GO?

These are really yummy.  My husband ate the last banana, so I used 1.25 mashed canned pears.  Because the pears were extra sweet, I reduced the sugars a bit.  I also added a cup or so of coconut, and a dash of nutmeg.  yum yum yum yum.

:o MMmm they are so easy to make and so! good i made them and my non-vegan fam kept begging me to keep making em'. delicious. esp. good if you like banas and oatmeal  ;)  :P

These were awesome. I had trouble not eating all of the batter before baking them. They're pretty hard to mess up too - I didnt having baking soda so i used powder and i used less than 2 cups of oats (again, all i had left). I also added raisins. I dont usually even like oatmeal cookies, but they were great!

this is a great recipe. I have been searching for a simple oat cookie that would be both easy and delicous. well, Ive found it, just made a batch! and that dough, oh its hard not to eat it all before even baking the cookies!

I had been trying to figure out the basic recipe for the amazing vegan cookies from Gaia House Cafe in Grand Rapids since I first tried (and devoured) them. This is the closest I have gotten to theirs- praise satan!

As a non-vegan baker for the first 19 years of my life, I thought that these cookies were AMAZING. The texture was perfect.
