Crazy Quick Oat Cookies
1/3 cup silken soft tofu
1/3 cup vegetable/canola oil
1/4 cup apple juice or concentrate
1 tablespoon vanilla extract
1/2 cup raw vegan sugar
1/4 cup maple syrup
2 cup quick oats
2 cup flour (I use wheat)
1/2 teaspoon baking powder and 1/2 teaspoon baking soda
1/2 teaspoon salt
2 cup vegan chocolate chips or carob chips
1 cup walnuts (optional)
In a medium-sized bowl, blend flour, baking soda, salt, and baking powder. Whip tofu with mixer (in a separate bowl) until creamy. Add oil, apple juice, vanilla, vegan sugar at low speed mix until vegan sugar is somewhat dissolved. Add vegan maple syrup and mix about 1 minute (still at low speed ). Add oats and flour mixture, blend about 2 min or until is well blended fold in walnuts and chips . Drop large tablespoons of dough on well oiled cookie sheet. Slightly flatten with back of spoon and bake 13-15 min at 350 degrees F.
SO HOW'D IT GO?
After I had mentioned Oatmeal cookies I realized that I didn't have applesauce, bananas, or enough margarine so it was wonderful that I found this recipe. My dough was quite stiff. The dough was delicious, and the cookies good, but cakey, but my omni husband said that I could make these again. I used water instead of apple juice.
