Most Delicious Oatmeal Raisin Cookies

What you need: 

1 cup margarine, softened (Smart Balance Light)
1 cup firmly packed brown sugar
1 cup granulated sugar
2 egg substitutes
1 teaspoon vanilla
1 3/4 all-purpose flour
1 teaspoon baking powder
1 teaspoon cinnamon
3 cups oats, uncooked
1 cup raisins

What you do: 

Heat oven to 350.
Mix margarine and sugars until creamy.
Add eggs and vanilla; mix well.
Add combined flour, baking powder and cinnamon; mix well.
Stir in oats and raisins; mix well.
Drop by tablespoonfuls onto ungreased cookie sheet.
Bake 10 minutes or until golden brown.

SO HOW'D IT GO?

I did add a little extra water to moisten these babies up and I used two heaping spoonfuls of applesauce as my egg substitute. These were delicious!!!!

I'm not sure what I did wrong, because the picture accompanying this recipe means that *somebody* made the cookies just fine, but my cookies came out like rocks! I swapped out the cinnamon for ginger and the raisins for apricots, but was the only alteration I made. The dough was *extremely* crumbly, and I would recommend adding a small amount of water at the end to make it stick together better--I probably could have baked it spread out on aluminum foil and made granola. Which really doesn't sound like a bad idea.
