What's your favorite curry recipe using coconut milk and vegetables?

I have a whole tray of cut-up broccoli, carrots, snap peas and other vegetables from a party.
I'm craving curry. I have coconut milk and some spices. What is your favorite curry recipe?
hrmmmm probably my favourite curry recipe that uses coconut milk is a korma w/blended cashews+coconut milk + a whole lot of spices, but I don't have the recipe handy...
I always have commercial green Thai curry paste in the fridge, it lasts forever. Saute the veggies a bit, add the paste and when it smells wonderful mix in the coconut milk very well, cover and simmer till done.
...and if you don't have the paste, they tend to consist of ginger, garlic, basil, green chillies, lemongrass, and green onion, with lime leaves and/or galangal if you can get hold of them. I think the broccoli/snap peas would be best in a Thai-style curry rather than a dry South-Indian-style one.

grated carrot
few T of coconut milk
add scallion, leek, fresh lemon grass if you like
salt, chili and spice to taste
sprinkle with soaked sesame seeds
end result is a rather light salad that tastes and looks great.
I don't ever use recipes for curries anymore. I just start throwing in the spices for the regional curry I want and adjust until it's right.
Love that light Thai carrot salad idea, eric. Thanks! I tried doing my own vegetable curry, throwing unmeasured spices in the coconut milk, but it still needs something.
