Cookbook challenge! (from PPK) 11. Vegan Fire and Spice

A group on PPK is doing this, and I think it's a great idea! We're going to go through a group of cookbooks to try new recipes. Join in, post what you made, what you thought, and some pics! Do whatever weeks you want, however many days per week you want, and however many recipes you want-one, some, all, whatever! I want to be on the same time frame as PPK (so I can do both), so we'll do the rest of this week VCON (through Sunday), and start anew on Monday, with the next book. I've included a couple options, too. I think we might throw VCON in again, later, so we can have more time with it. Let's do it! (sorry about the day/time difference for you outside USAers!)

In order of use:

- VCON (Thursday, 27th-Sunday, 30th)
- VWAV (Monday, 31st-Sunday, 5th)
- VB (Monday, 6th-Sun, 12th)

Dang! I wish 'd read this BEFORE I went to the grocery store.  I can hop on with Vegan Vittles and How it All Vegan. Are they doing the other books in that series? What is VB?

The list is the same, except I added the and/or choices in. VB is Vegan Brunch! You might be able to whip something up with your ingredients!

My first recipe was penne vodka! I've been wanting to try it for a really long time, and made a special trip out to get vodka. I don't know how much it matters, but I bought a pretty cheap brand! Anyway, it turned out really good. It's really tasty. I was expecting to be blown away, but wasn't quite. I think I'll just tweak the herbs a bit? I'm not sure. It's good. I don't have an immersion blender, so I blended the almonds, and then added some pasta sauce to process it, and make it creamy. I added a bit of nut. yeast to the almonds. Oh, I used spinach twisties instead of penne, but I def. think penne would be better. I love, love the basil.

I have VCon, Radiant Health, Inner Wealth, and Vegan Vittles. I'll try to hope on with VCon while you're still doing it if I can!!! FUN idea! :)

I'm making udon with mushrooms and kale in miso broth tonight! I was briefly torn between it, and black bean burgers. I think I'll make the burgers tomorrow! I love doing this.

My 2nd recipe! Udon noodles with shiitake mushrooms and kale in miso broth. pg. 201

Yum! I did make a couple of changes. 1. I used a mixture of mushrooms (mostly crimini) instead of shiitake, because they are so expensive. 2. I used wide dried udon. 3. I used white wine instead of mirin. 4. I used red kale instead of green.

This dish is pretty easy, and extremely healthy. It's also really filling! There's really nothing to making it, except the little bit of chopping. It has subtle flavor, but is really satisfying. I'm sure it'd be even more flavorful with the shiitake. It's maybe not the best SUMMER dish, but really good!

I couldn't get a good picture, because the broth was on bottom.

Allychristine, your picture looks delicious!!
I tried the Baja-style grilled tempeh tacos from Veganomicon today. They were really really delicious!! I made them exactly according to the directions and they were great!

Thanks! I've wanted to try those tacos, but 1. neither of us really likes tempeh, and P won't even let me buy it 2. it looks so time consuming!

AC, make the tacos!!! The first time I made them I used tofu because I was a tempeh hater too, and they came out ok, but recently I decided to give the tempeh another chance and they were waaaaaaaay better. If you put together the tempeh marinade the night before and leave it overnight and make the sour cream stuff the night before also, it's really not that hard.

DOOOO IIIIT. you will like tempeh. Hm. I wonder if seitan would work...

I challenge myself to use my cookbooks at least once a week, so I'd love to join in.  Not sure I can make Vcon by this weekend, but I might. But for sure will join in after that.

The first time I made them I used tofu because I was a tempeh hater too, and they came out ok, but recently I decided to give the tempeh another chance and they were waaaaaaaay better. #3 and 4: Black bean burgers and Samosa stuffed baked potatoes!

They are both really tasty! For the potatoes, I burned the seeeeeddsss. It wasn't too bad, so I just continued on. I did add some fresh mustard seeds, and ended up adding some ground coriander. I used yukon golds that I baked without foil. I also had to use canned peas, because that's what I had, and lime juice. They would have been soooo much better with frozen peas. Pretty time consuming to do all the steps, so I don't know that I'll make them again. They are tasty, though.

The black bean burgers came out really, really well. They are some of our favorite patties! I made some fresh breadcrumbs with leftover baguette. I used all my cumin on the potatoes! I ended up using some paprika, cayenne, and chipotle powder. I also used onion powder, because I didn't feel like grating onion! Because of that, I had to add some more water. Instead of cilantro, I added fresh basil, and it's really yummy. The texture was perfect. The only thing I would do differently: add more salt, and maybe more basil. They'd be great on a burger, but we just ate them as is this time.

But I cheated and made some v'con stuff yesterday (I'm down to mostly tofu recipes of Vegan Brunch). Should I be taking pics or something?

I'll join you for the next Vcon.. VB and Vegan Planet! This is a great idea.. only problem is Vegan Planet and Vcon are the two cookbooks I use the most! But this will at least challenge me to try some new recipes.

...The perfectionist in me hates to think people aren't using the improved version!! ::)
